Easy BBQ Chicken Tostadas
We made some Easy BBQ Chicken Tostadas on the Blackstone griddle, but I also included skillet directions for you in the recipe card.
Leftover Smoked BBQ Chicken is never a bad thing, and that’s what we used for these tostadas… but any shredded chicken will work great.
I used corn tortillas for these, but also made my husband some BBQ chicken quesadillas on flour tortillas, because we are a house divided when it comes to tortillas 😉

How to make Easy BBQ Chicken Tostadas
First preheat a large skillet or your Blackstone flat top griddle to medium low/ medium heat.
Add some cooking oil of choice and the corn tortillas.

Cook them 7 to 10 minutes, flipping a few times and lower the heat if needed.
Then remove once crisped how you prefer.
As you can see, I am making my husband’s quesadillas at the same time thanks to the large griddle cook space.

Top each crispy tortilla with guacamole first.

Then the leftover shredded chicken that I tossed with a little BBQ seasoning and sauce.
I also drizzled a little more BBQ sauce over top.

These were the two meals I made within 10 minutes time using leftover smoked, shredded BBQ chicken… not bad, right?!

Easy BBQ Chicken Tostadas
Easy BBQ Chicken Tostadas is an easy and fun dinner idea or snack, you can make this recipe in a skillet or your Blackstone flat top griddle!
Ingredients
- cooking oil of choice
- 4 soft corn tortillas
- 1 1/2 cups leftover shredded chicken (mine was leftover smoked chicken, recipe in post above)
- BBQ seasoning blend
- your favorite BBQ sauce
- 1/2 cup guacamole
- Toppings of choice: cheese, cilantro, pickled onions or jalapenos
Instructions

Preheat your large skillet or Blackstone griddle over medium low/ medium heat. Add cooking oil and the tortillas. Cook 7 to 10 minutes, flipping a few times until crisped how you prefer.

Toss the chicken with BBQ seasoning and some BBQ sauce until combined.

Top each crispy tortilla with guacamole, the BBQ chicken, and more BBQ sauce if desired. Plus additional toppings such as cheese, cilantro, pickled onions, and/or jalapenos. Serve with plenty of napkins!
