Hot Honey Peach Chicken Salads
I’m alllll about fun and unique summer salad recipes, and these Hot Honey Peach Chicken Salads with Burrata Cheese can be made in a skillet or your Blackstone griddle.
I actually made way more chicken than I needed for these salads, and used some for a chicken sandwich for my husband… because no way that man would eat a salad with fruit on it 🙂
And used the rest in a few wraps and simple salads throughout the week.

How to make Blackstone Hot Honey Peach Chicken Salads
I started the diced chicken thighs on my Blackstone griddle, or in a skillet works too.
Either way, over medium heat with a little cooking oil and season with kosher salt, pepper, and any seasoning blend of choice.
Cook the chicken for about 4 to 5 minutes, I also started tossing some arugula in olive oil and balsamic vinegar.

Now comes the hot honey!
Drizzle as much or as little as your heart desires right on the chicken in the skillet or griddle.

Cook the chicken for about 4 to 5 more minutes, mixing a few times.
I also decided to add my sliced peaches to the griddle, that’s optional.

The chicken gets nice and caramelized, and a little charred thanks to the hot honey.

Finally, assemble the salads over the arugula, or lettuce of choice with the chicken, peaches, burrata cheese, kosher salt and pepper, plus a drizzle of balsamic glaze.

My husband’s chicken sub in the back, and my beautiful salad front and center 🙂

Hot Honey Peach Chicken Salads
Hot Honey Peach Chicken Salads can be made in a skillet or your Blackstone griddle, the ultimate summer salad recipe with burrata cheese!
Ingredients
- cooking oil of choice
- 3/4 pound boneless, skinless chicken thighs or chicken breasts (I actually cooked 2 pounds and used the leftover chicken bites as meal prep in a few salads and wraps) cut into bite size pieces
- kosher salt, pepper, crushed red pepper flakes, all purpose seasoning blend of choice
- hot honey
- 2 small slightly ripe peaches sliced
- 6 cups lettuce of choice (I used arugula)
- olive oil, balsamic vinegar
- 8 ounces burrata cheese
- balsamic glaze (vinegar section of store or Amazon)
Instructions

Preheat your skillet or Blackstone griddle to medium heat. Add cooking oil of choice and chicken, season with kosher salt, pepper, crushed red pepper flakes, and seasoning blend of choice. Cook 4 to 5 minutes, mixing a few times.

Drizzle with hot honey, amount according to your taste preference, and cook another 4 to 5 minutes.

Remove chicken to cool slightly, optional to add the peach slices to the skillet or griddle for a minute or two.

Toss the arugula with a little olive oil, balsamic vinegar, kosher salt, and pepper.

Assemble the salads with a bed of arugula, the hot honey chicken, peaches, tear the burrata cheese to add over top, a little more kosher salt, pepper, crushed red pepper flakes, plus a drizzle of balsamic glaze.
