Pesto Sun Dried Tomato Pasta Sauce

This is an easy peasy pasta sauce recipe that basically combines a few store-bought ingredients to put a little personality into pasta night, you gotta make this Pesto Sun Dried Tomato Pasta Sauce!

I made regular spaghetti for my family, but used low carb and low calorie shirataki noodles for mine.

We added Italian sausage, or you can leave that out for a vegetarian or meatless meal.

How to make Pesto Sun Dried Tomato Pasta Sauce

Start with a large pot or saucepan over medium heat.

Add some olive oil and ground Italian sausage if using.

Cook that for a few minutes and break the sausage apart with spatulas and then add some minced garlic.

Cook the garlic for 2 minutes and add in some marinara sauce, a jar of pesto, kosher salt, pepper, Italian seasoning, and crushed red pepper flakes.

Let the sauce simmer for 10 minutes, stirring a few times.

As the sauce simmered I boiled thin spaghetti noodles.

And started draining and rinsing my shirataki noodles.

Finally, stir in 6 ounces of sun dried tomatoes, mine were packed in oil but I did not add the oil.

Also stir in 1/2 cup grated parmesan cheese.

These were my low carb noodles.

Ingredients

  • olive oil
  • 1 pound ground Italian sausage (optional)
  • 6 to 8 cloves garlic
  • 1 (32-ounce) jar marinara sauce
  • 1 (8-ounce) jar pesto
  • kosher salt, pepper, Italian seasoning, crushed red pepper flakes
  • 1/2 cup grated parmesan cheese
  • 1 (6-ounce) jar sliced sun dried tomatoes (tomatoes only, not the oil)
  • cooked pasta of choice (I served this over regular pasta for my family, and low carb/ low calorie shirataki noodles for me)

Instructions

  1. Set a large pot or saucepan over medium heat. Add olive oil and ground sausage, if using. Cook 5 to 6 minutes, breaking apart with spatulas and then add the garlic. Cook 2 minutes, mixing together.

  2. Pour in the marinara sauce, pesto, kosher salt, pepper, Italian seasoning, and crushed red pepper flakes. Let this simmer for 10 minutes, stirring a few times and lower the heat to medium low if it's bubbling too much.

  3. Add parmesan cheese and sun dried tomatoes, stir and cook 1 to 2 more minutes.

  4. Serve over cooked pasta of choice.
