Pesto Sun Dried Tomato Pasta Sauce is such an easy recipe, you can add Italian sausage or leave it meatless for a vegetarian dish!

Ingredients
  • olive oil
  • 1 pound ground Italian sausage (optional)
  • 6 to 8 cloves garlic
  • 1 (32-ounce) jar marinara sauce
  • 1 (8-ounce) jar pesto
  • kosher salt, pepper, Italian seasoning, crushed red pepper flakes
  • 1/2 cup grated parmesan cheese
  • 1 (6-ounce) jar sliced sun dried tomatoes (tomatoes only, not the oil)
  • cooked pasta of choice (I served this over regular pasta for my family, and low carb/ low calorie shirataki noodles for me)
Instructions
  1. Set a large pot or saucepan over medium heat. Add olive oil and ground sausage, if using. Cook 5 to 6 minutes, breaking apart with spatulas and then add the garlic. Cook 2 minutes, mixing together.

  2. Pour in the marinara sauce, pesto, kosher salt, pepper, Italian seasoning, and crushed red pepper flakes. Let this simmer for 10 minutes, stirring a few times and lower the heat to medium low if it's bubbling too much.

  3. Add parmesan cheese and sun dried tomatoes, stir and cook 1 to 2 more minutes.

  4. Serve over cooked pasta of choice.
