High Protein Sausage Egg Bites
Some weeks, meal prepping breakfast is the only thing that keeps me on track, so this week I made High Protein Sausage Egg Bites with cottage cheese!
Bake them in a muffin pan, store in the fridge, and reheat for a quick, easy, and healthy breakfast or snack.
How to make High Protein Sausage Egg Bites
Start with a cup of cottage cheese and 1/4 cup of your favorite unflavored protein powder in a bowl.

Also 6 eggs, 6 to 8 cooked sausage patties that have been diced (I used turkey sausage), kosher salt, and pepper.

Plus half cup of your favorite shredded cheese.

Mix it all together and use an ice cream scoop to divide this mixture into a 12-count muffin pan.
My silicone muffin pan is always a safe way to ensure they don’t stick.

Now into a 350 degree oven for 20 to 25 minutes.

Let High Protein Sausage Egg Bites cool before removing them 🙂
I had to enjoy one right away, of course, and stored the rest in my fridge.
These little bites pack around 12 grams of protein each and only about 120 calories (exact amount will depend on which sausage and which protein powder you use).

High Protein Sausage Egg Bites
High Protein Sausage Egg Bites is a breakfast recipe made with cottage cheese in muffin tins for a healthy meal prep option!
Ingredients
- 1 cup cottage cheese
- 6 eggs
- 1/4 cup unflavored protein powder
- 6 to 8 cooked breakfast sausage patties (pork, chicken, or turkey) diced
- 1/2 cup shredded cheese of choice
- kosher salt, pepper
- nonstick cooking spray
Instructions

Put the cottage cheese, eggs, protein powder, diced sausage patties, cheese, kosher salt, and pepper into a bowl and stir until combined.

Spray a (12-count) regular size muffin pan with nonstick spray. Use an ice cream scoop to add the batter to the muffin pan.
Note: I used a silicone muffin pan on a baking sheet and the egg bites did not stick at all.

Bake in a 350 degree oven for 20 to 25 minutes. Let cool before removing. Store in a covered container in the fridge for a few days and reheat before enjoying.
