Chickpea Cucumber and Feta Salad

One of these Chickpea Cucumber and Feta Salads will be my healthy dinner, and I am meal prepping the other for an easy lunch tomorrow.

You can add cooked chicken for extra protein, or leave it out for a meatless meal.

AND we are keeping things super simple by starting with a Mediterranean Salad Kit!

How to make Chickpea Cucumber and Feta Salad

Divide the salad kit between two bowls, or in my case one bowl and one meal prep container.

Then add some diced mini cucumber and a can of chickpeas that have been rinsed and drained.

Pickled red onions were a must for me, and I added grilled chicken but you could easily keep this vegetarian.

I added the dressing and feta from the salad kit, but had to put more feta.

And some tzatziki!!

Kosher salt and pepper were needed, toss it all together, and enjoy!!

Chickpea Cucumber and Feta Salad can be a healthy vegetarian or meatless salad or add chicken for a boost of protein, so easy to meal prep!

Ingredients

  • 1 Mediterranean salad kit (I used Taylor Farms)
  • 1 cup diced, cooked chicken (optional)
  • 1 cup canned chickpeas drained and rinsed
  • 3 mini cucumber sliced
  • kosher salt, pepper
  • 1/2 cup tzatziki
  • 1/3 cup pickled red onions (optional)
  • 1/3 cup crumbled feta cheese

Instructions

  1. Put the salad mix in a bowl along with chicken (if using), chickpeas, cucumber, kosher salt, pepper, tzatziki, balsamic dressing kit from salad kit.

  2. Toss it all together with tongs. Serve topped with pickled red onions (if using) and feta cheese.

    Note: If meal prepping add salad dressing and tzatziki right before serving.
