
Chickpea Cucumber and Feta Salad can be a healthy vegetarian or meatless salad or add chicken for a boost of protein, so easy to meal prep!
Put the salad mix in a bowl along with chicken (if using), chickpeas, cucumber, kosher salt, pepper, tzatziki, balsamic dressing kit from salad kit.
Toss it all together with tongs. Serve topped with pickled red onions (if using) and feta cheese.
Note: If meal prepping add salad dressing and tzatziki right before serving.
