Sausage and Burrata Baked Tortellini

This recipe is simple enough for a weeknight dinner, but extraordinary enough to serve to guests… it’s Sausage and Burrata Baked Tortellini.

In my opinion, when you add burrata cheese to literally anything it brings a certain WOW factor.

This creamy, cheesy comfort food dish can be prepared ahead of time and baked right before serving as well.

Another bonus of this recipe is you do not have to boil the pasta first; it just bakes in the oven, eliminating that extra step.

How to make Sausage and Burrata Tortellini

First remove the casings from your Italian sausage, that is IF they have casings.

And just a quick rough chop of the spinach.

That’s really all the prep work that’s involved.

Set a large soup pot or Dutch oven over medium heat and add some olive oil and the ground sausage.

Cook the sausage by itself for just a few minutes, breaking it apart as it cooks.

Then add the spinach, garlic, kosher salt, pepper, and Italian seasoning.

And cook just another few minutes.

Remove from heat and add a 24-ounce jar of marinara sauce.

I like to pour 1/4 cup water into the jar, close the lid and shake, then pour in the water with the sauce that clung to the jar.

Next, a 20-ounce package of uncooked cheese tortellini, thawed first if frozen.

And tear in 4 ounces of burrata cheese.

Give this a mix to evenly combine.

And pour right into a 9×13 casserole dish.

Top this with 4 more ounces of burrata and pop it into a 350-degree oven for 20 to 30 minutes.

Sausage and Burrata Baked Tortellini comes out melty, bubbly, and smelling faaaaaaabulous!

Leftovers are just as good the next day.

Sausage and Burrata Baked Tortellini is an easy weeknight dinner recipe with only a few ingredients, gotta love simple baked cheesy pasta!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage
  • 4 cups fresh spinach chopped
  • 6 cloves garlic minced
  • kosher salt, pepper, Italian seasoning
  • 1 (20-ounce) package cheese tortellini uncooked, thaw first if frozen
  • 1 (24-ounce) jar marinara sauce
  • 1/4 cup water
  • 8 ounces burrata cheese

Instructions

  1. Set a large soup pot or Dutch oven over medium heat. Add olive oil and sausage, cook 6 minutes, breaking apart the sausage as it cooks.

  2. Add spinach, garlic, kosher salt, pepper, and Italian seasoning, cook 2 more minutes.

  3. Remove from heat and add the tortellini and marinara sauce. Put water in empty marinara sauce jar, close lid, shake, and add to pot. Stir until combined.

  4. Tear half of the burrata into smaller pieces and add to tortellini, gently combined and transfer to a 9×13 casserole dish. Tear remaining burrata and place over top.

  5. Bake in a 350-degree oven for 20 to 30 minutes.
