Air Fryer Jalapeno Popper Chicken Bombs are quite the splurge meal!

They have all of my comfort food favorites including cheese and bacon 🙂

If you are doing the low carb Keto thing this recipe is right up your alley.

How to make Air Fryer Jalapeno Popper Chicken Bombs

First mix together the filling for these chicken bombs.

You’ll only need half the block of cream cheese and jalapenos for the actual filling.

BUT… I mixed it ALL together, adding a cup of cheese instead of the half cup needed for the filling, to make a dip!

Just set half of it aside (BEFORE stuffing the chicken) to enjoy on crackers or tortilla chips.

Mixing helps if the cream cheese is at room temperature, but it does take a minute to come together.

Then season both sides of 4 to 6 boneless skinless chicken thighs with kosher salt, pepper, and a seasoning blend that you love.

I went with a simple Cajun seasoning.

Add some of the jalapeno popper filling to the center of each chicken thigh.

Then fold in the sides and wrap 2 to 3 slices of bacon around each, overlapping slightly.

The amount of bacon will depend on the chicken thigh size, some of mine needed only 2 slices, while the bigger ones needed 3.

The more tightly you can wrap them will reduce the amount of leakage when cooking.

Then place them in the air fryer basket.

Set the air fryer to 400 degrees for 12 to 14 minutes, then carefully flip them using tongs.

And set the air fryer for another 12 to 14 minutes.

If some of the filling leaks out like mine did, just scoop it out of the air fryer basket and serve it with the chicken.

No filling shall go to waste.

You can expect the bacon on the outside to be crisp, but obviously the inner layer of bacon will not be crisp.

Still delicious and cooked through.

Air Fryer Jalapeno Popper Chicken Bombs is a yummy low carb recipe with stuffed chicken wrapped in bacon and cooked in the air fryer

Ingredients

  • 4 ounces cream cheese
  • 2 ounces diced, canned jalapenos or fresh diced jalapenos
  • 1/2 cup shredded cheese of choice
  • kosher salt, pepper, seasoning blend of choice
  • 4 to 6 boneless, skinless chicken thighs
  • 1 pound bacon you may not use the whole pound

Instructions

  1. Put the cream cheese in a bowl with the jalapenos, shredded cheese, kosher salt, pepper, and seasoning blend of choice. Stir until combined, which does take a minute.

  2. Lay the chicken thighs flat, season both sides with kosher salt, pepper, and your favorite seasoning blend.

  3. Put some of the jalapeno popper mixture in the center of each chicken thigh. Fold the chicken around the filling, then wrap 2 to 3 slices of bacon around each, overlapping slightly. The amount of bacon will depend on the chicken size.

    Note: Tightly wrapping the bacon will reduce any filling leakage as they cook, although a small amount of leakage is possible.

  4. Set the air fryer to 400 degrees for 12 to 14 minutes, flip them with tongs and air fry 12 to 14 more minutes.

    Note: Expect the outer layer of bacon to be crisp, the inner layer of bacon will not be crispy but it is cooked through.
