
Slow Cooker Parmesan Chicken and Potatoes
Slow Cooker Parmesan Chicken and Potatoes is an easy to make and kid friendly Crock Pot dinner recipe.
Gotta love those simple dump and go complete slow cooker meals.
Plus, with this cooking all day low and slow in your Crock Pot, your kitchen will be smelling heavenly 🙂

How to make Slow Cooker Parmesan Chicken and Potatoes
First dice a pound of redskin or gold potatoes and put them in your slow cooker.
I aimed for 1 to 2 inch pieces.
Then cut 1 1/2 to 2 pounds of boneless, skinless chicken thighs into 1 to 2 inch pieces.
And put those in the Crock Pot as well and season with plenty of kosher salt and pepper.

Next add a cup of sour cream to a bowl along with 1/2 cup mayo, 1/2 cup shredded parmesan cheese, fresh minced garlic, kosher salt, and pepper.
Also 2 tablespoons of dried Italian seasoning.
And just give that a stir.

Mix in a few spoonfuls of the sauce with the chicken and potatoes in the slow cooker.

Then spread the rest of the mixture over top.

And set the slow cooker to low for 6 to 8 hours.

Sprinkle more cheese and Italian seasoning over your Slow Cooker Parmesan Chicken and Potatoes before serving 🙂

The oil in the mayo and cheese will separate as this cooks, this is normal.
So I do recommend stirring it all together before serving and turn the Crock Pot off for about 30 minutes so the sauce comes together.

So flavorful, creamy, and every bite is insanely delicious!!

Slow Cooker Parmesan Chicken and Potatoes
Slow Cooker Parmesan Chicken and Potatoes is an easy Crock Pot dinner recipe, so tasty with a creamy and cheesy sauce!
Ingredients
- 1 1/2 to 2 pounds boneless, skinless chicken thighs cut in 1 to 2 inch pieces
- 1 pound redskin or gold potatoes cut into 1 to 2 inch pieces
- kosher salt, pepper
- 1 cup sour cream
- 1/2 cup mayo
- 1/2 cup shredded parmesan cheese (plus more to sprinkle over top)
- 6 to 7 cloves garlic minced
- 2 tablespoons dried Italian seasoning (plus more to sprinkle over top)
Instructions

Put the chicken and potatoes in the slow cooker and season with kosher salt and pepper.

Put the sour cream, mayo, parmesan cheese, garlic, Italian seasoning, kosher salt, and pepper in a bowl and stir until mixed.

Put a few spoonfuls in the slow cooker and toss with the chicken and potatoes. Spread the remaining mixture over top of the chicken and potatoes.

Set the slow cooker to low for 6 to 8 hours. Top with more parmesan cheese and Italian seasoning before serving if desired.
Note: Naturally the cheese and mayo will separate as this cooks, I stirred mine together and let it sit with the slow cooker turned off for about 30 minutes to allow the sauce to come together and become more creamy.
