Ingredients
  • 1 1/2 to 2 pounds boneless, skinless chicken thighs cut in 1 to 2 inch pieces
  • 1 pound redskin or gold potatoes cut into 1 to 2 inch pieces
  • kosher salt, pepper
  • 1 cup sour cream
  • 1/2 cup mayo
  • 1/2 cup shredded parmesan cheese (plus more to sprinkle over top)
  • 6 to 7 cloves garlic minced
  • 2 tablespoons dried Italian seasoning (plus more to sprinkle over top)
Instructions
  1. Put the chicken and potatoes in the slow cooker and season with kosher salt and pepper.

  2. Put the sour cream, mayo, parmesan cheese, garlic, Italian seasoning, kosher salt, and pepper in a bowl and stir until mixed.

  3. Put a few spoonfuls in the slow cooker and toss with the chicken and potatoes. Spread the remaining mixture over top of the chicken and potatoes.

  4. Set the slow cooker to low for 6 to 8 hours. Top with more parmesan cheese and Italian seasoning before serving if desired.

    Note: Naturally the cheese and mayo will separate as this cooks, I stirred mine together and let it sit with the slow cooker turned off for about 30 minutes to allow the sauce to come together and become more creamy.
