Cinnamon Raisin Bagel Casserole
This simple and easy breakfast casserole recipe is sure to bring a smile to everyone in the morning… Cinnamon Raisin Bagel Casserole!
It’s kind of like a French toast casserole, but made with bagels.
And it’s a little unique because I am using cinnamon flavored coffee creamer in addition to milk.
Which brings both flavor and richness.
How to make Cinnamon Raisin Bagel Casserole
First cut 3 bagels into cubes and put them in a greased 9×13 casserole dish.
Then add a cup of raisins over top and spread them evenly.
I am using plain bagels, but of course the cinnamon raisin bagels will add even more raisins and cinnamon flavor.
Next crack 8 eggs in a bowl.
And add 1 cup of cinnamon flavored coffee creamer and 3/4 cup milk.
Really most flavors of creamer will work too.
Then add in 1/3 cup brown sugar, 1/2 tablespoon ground cinnamon, and a pinch of salt.
Whisk this very well until combined.
And pour over the bagels and raisins in the casserole dish.
Press down so the bagels soak up all the egg and milk mixture.
Let this sit for about 30 minutes and press down a few more times.
Then bake in a 375 degree oven for 35 to 40 minutes.
Serve Cinnamon Raisin Bagel Casserole warm with butter and maple syrup 🙂
Such a yummy breakfast!

Cinnamon Raisin Bagel Casserole
Cinnamon Raisin Bagel Casserole is such an easy breakfast or brunch French toast style casserole recipe, leftovers are just as good too!
Ingredients
- 3 bagels (I used plain, but cinnamon raisin bagels would work too) cut into cubes
- 1 cup raisins
- 8 eggs
- 1 cup cinnamon flavored coffee creamer (most other flavors will work too)
- 3/4 cup milk
- 1/3 cup brown sugar
- 1/2 tablespoon ground cinnamon
- pinch of salt
- butter, maple syrup
Instructions

Put the bagel cubes in a greased 9×13 casserole dish. Sprinkle the raisins over top.

Crack the eggs in a bowl and add the flavored creamer, milk, brown sugar, cinnamon, and salt. Whisk well until combined.

Pour this mixture over the bagels. Press down so the bagels start to absorb the egg mixture. Let this sit for 30 minutes, pressing down a few more times.

Bake in a 375 degree oven for 35 to 40 minutes. Serve warm with butter and maple syrup.
