Air Fryer Breakfast Biscuit Bombs

With a name like Air Fryer Breakfast Biscuit Bombs…it just sounds like a super fun recipe, am I right?!

Like wondering hmmmm, what is inside of them… what kind of yumminess are they going to explode with?!

These are a great weekend breakfast to serve right away.

Or you can make some on the weekend and reheat during busy school or work mornings.

How to make air fryer breakfast biscuit bombs

First crack 3 eggs in a bowl.

Then add some milk, kosher salt, and pepper and beat with a fork.

Set a skillet over medium low heat with some butter and cook your scrambled eggs for a few minutes.

Then add a cup of either cooked breakfast sausage or a cup of diced ham.

And a cup of shredded cheese.

Stir this until the cheese is melted and everything is evenly combined.

And let it cool before stuffing the biscuit dough.

When ready to stuff, simply unroll a package of jumbo biscuits in a tube.

I am just a simple home cook after all… and not a fancy chef.

So I will proudly embrace my usage of biscuits in a tube đŸ˜‰

Roll each biscuit with a rolling pin to make it thinner.

Then add a heaping pile of the egg, cheese, and ham mixture.

You’d be surprised how much filling you can fit… the dough is very stretchy, so go ahead and fill it pretty full.

Then gently pull and fold the dough over the filling, overlapping slightly at the top.

Kind of roll each one into a little ball.

I had about two spoonfuls of the filling leftover, which made for the perfect snack to hold me over until these delicious flavor bombs were finished.

Place the biscuit bombs in the air fryer basket, seam side down.

And set the air fryer to 370 degrees for 7 to 8 minutes.

Next brush a mixture of melted butter and maple syrup over top.

And cook another 2 to 3 minutes in the air fryer.

Ingredients

  • 3 eggs
  • 3 tablespoons milk
  • kosher salt, pepper
  • 3 tablespoons butter
  • 1 cup cooked, crumbled sausage or diced ham
  • 1 cup shredded cheese of choice (I used Mexican blend)
  • 1 16 oz tube jumbo biscuits (8 biscuits come in a tube)
  • 1 tablespoon maple syrup

Instructions

  1. Crack the eggs in a bowl and add milk, kosher salt, and pepper. Beat with a fork until evenly combined.

  2. Set a skillet over medium low heat and add 1 tablespoon of the butter and the eggs. Cook the eggs, scrambling as they cook until done how you prefer, about 3 to 4 minutes.

  3. Stir in the cooked sausage or ham and the cheese, mix together with the eggs in the skillet until combined. Remove from the heat and let cool.

  4. Separate the biscuits and place on a flat surface. Roll each slightly with a rolling pin.

  5. Place 1/8 of the egg, meat, cheese mixture in the center of each biscuit. Fold the biscuits around the filling, overlapping slightly, and roll into a ball with your hands. Place each in the air fryer basket, seam side down.

  6. Set the air fryer to 370 degrees for 7 to 8 minutes. Melt the remaining 2 tablespoons of butter and mix with the maple syrup. Brush this mixture over the breakfast bombs and cook another 2 to 3 minutes in the air fryer.

  7. Let cool slightly before serving.
