Air Fryer Coconut Chicken
I made this easy Air Fryer Coconut Shrimp a few weeks ago and we all loved it so much I thought to make a recipe for Air Fryer Coconut Chicken this week.
Pretty much the same recipe only using bite size pieces of chicken in place of the shrimp.
You can’t go wrong breading anything in panko.
It gives the perfect crunch every time.
And the coconut flakes added a bit of sweetness and just enough of a hint of coconut flavor.
How to Make Air Fryer Coconut Chicken
First you’ll set up a breading station right next to the air fryer basket.
In one bowl crack and egg and beat it with a fork.
In another bowl add 1/2 cup each panko bread crumbs and sweetened coconut flakes along with kosher salt and pepper.
Give that a little stir to combine the breading.
This is just about 1 1/2 pounds of chicken breasts that I cut into bite size pieces.
You could easily do chicken strips if you prefer.
Dip each piece of chicken into the egg and then into the panko-coconut breading.
Then place right into the air fryer basket and spray with some olive oil cooking spray. This will help achieve that golden brown color.
And set the air fryer to 390 degrees for 15 minutes.
Mine barely fit into one batch, if your air fryer is smaller just do these in 2 batches.
By the time everyone is ready for a second helping, the second batch will be ready 🙂

Air Fryer Coconut Chicken
Air Fryer Coconut Chicken has a crispy, crunchy breading of panko bread crumbs and coconut flakes and dipped in sweet chili sauce
Ingredients
- 1 1/2 pounds chicken breast
- 1 egg
- 1/2 cup panko bread crumbs
- 1/2 cup sweetened coconut flakes
- kosher salt, pepper
- olive oil cooking spray (I used Pam)
- 4 oz sweet chili sauce
Instructions

Cut the chicken into bite size pieces. Crack the egg in a bowl and beat with a fork. Put the panko, coconut flakes, kosher salt, and pepper in another bowl and mix together.

Dip each piece of chicken into the egg and then into the panko coconut breading, press the breading slightly so it sticks to the chicken.

Place the chicken in the air fryer basket and spray the top with olive oil cooking spray. Set the air fryer to 390 degrees for 15 minutes.
Note: Depending on the size of your air fryer, this may need to be cooked in 2 batches.

Serve the chicken with the sweet chili sauce for dipping.
