So of course I was going all out with the food for his first birthday party.
He loves the movie Coco, so that’s the theme my daughter went with.

How to Make Slow Cooker Salsa Verde Chicken
This dish is great to feed a crowd and could not be simpler.
Two pounds of chicken go into the slow cooker first.
Then season with kosher salt and pepper.
Next goes half a jar of salsa verde and half a jar of queso.
Keep the remaining salsa and queso to enjoy with chips as you enjoy the chicken tacos.
Turn the slow cooker on low for 6 to 8 hours.
Walk away and let the slow cooker work it’s magic 🙂
It will be all bubbly and smells amazing!
Next use two forks to shred the chicken right in the slow cooker.
It only takes a few minutes and will be perfectly shredded for tacos.
We went with soft tortillas for our tacos.
Put the chicken in first and then load it up with your favorite taco toppings.
I kept mine simple with just hot sauce, lettuce, and cheese.

Slow Cooker Salsa Verde Chicken
Slow Cooker Salsa Verde Chicken is the perfect chicken taco filling and only has three ingredients, so easy and delicious
- 2 pounds boneless, skinless chicken breasts
- kosher salt, pepper
- 1 16 oz jar salsa verde
- 1 15 oz jar queso blanco dip
- tortillas, chips, and other taco toppings of choice
Put the chicken in the slow cooker and season with kosher salt and pepper.
Add half of the salsa verde and half of the queso over the chicken. Turn the slow cooker on low for 6 to 8 hours.
Shred the chicken with two forks in the slow cooker. Serve the chicken with tortillas and taco toppings. Serve the remaining salsa verde and queso with chips for dipping.
