Slow Cooker Chipotle Ranch Chicken was the perfect taco filling to make our taco night extra special!
Tacos are near and dear to my heart.
I try and mix up taco night putting my own twists and spins.
It could also be used on nachos, burritos, or served over Mexican rice!
Here is how to make Slow Cooker Chipotle Ranch Chicken
I started this in the morning before I left for work.
Two pounds of chicken go into the slow cooker.
Then season them with kosher salt, pepper, chili powder, garlic powder, paprika, and cumin.
Next up is the star ingredient…chipotle peppers in adobo sauce.
These guys are spicy, but in our house we love spice.
They aren’t overwhelming, but give a good kick in my opinion.
However, my youngest son devoured these without even mentioning the spice.
If you prefer them to be less spicy, simply remove 2 to 3 peppers and discard them.
Blend the peppers with about 2 Tbsps of water just to thin it out a bit.
Then spoon the blended peppers over the chicken.
Add a can of Rotel tomatoes and set the slow cooker to low for 6 to 8 hours.
Fast forward to several hours later and this is what you’ll see!
Add a cup of ranch dressing over the chicken.
Then shred it with two forks right in the slow cooker.
Add some fresh cilantro to the Slow Cooker Chipotle Ranch Chicken if desired and enjoy!
Taco night was extra yummy with this flavorful, spicy chicken filling.
Lucky for us we had leftovers and enjoyed it again as nachos the next night!

Slow Cooker Chipotle Ranch Chicken
Slow Cooker Chipotle Ranch Chicken is a spicy and flavorful chicken dish that can be used for tacos, nachos, burritos, or served with Mexican rice!
- 2 pounds boneless, skinless chicken breasts
- kosher salt, pepper
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1 7 oz can chipotle in adobo sauce
- 2 Tbsps water
- 1 10 oz can Rotel tomatoes
- 1 cup ranch dressing
- Optional: fresh cilantro for garnish
Put the chicken in the slow cooker. Sprinkle the kosher salt, pepper, chili powder, garlic powder, paprika, and cumin over top.
Put the chipotle peppers in adobo sauce into a blender or food processor with 2 Tbsps water. Blend until smooth and spoon it over the chicken in the slow cooker.
Note: Chipotle peppers are spicy, to decrease spice remove and discard a few of the peppers if desired.
Add the can of rotel tomatoes over top and turn the slow cooker on low for 6 to 8 hours.
Add the ranch dressing and shred the chicken with two forks right in the slow cooker. Add the cilantro if desired and use the chicken as a filling for tacos, nachos, burritos, or serve with Mexican rice.
