Weekly Meal Plan June 14
One of my favorite things to make each summer is a whole smoked BBQ pork shoulder and make some recipes for BBQ pulled pork leftovers!
It slow cooks for hours and so tender and juicy it just falls apart.
Another fun thing about making BBQ Pulled Pork is coming up with creative ways to use the leftovers 🙂
So that’s this week’s meal plan theme!
We are starting the week by making BBQ Pulled Pork and will use the BBQ pulled pork leftovers in all of our other dinners this week 🙂
BBQ Pulled Pork
Dinner number one this week will be this BBQ Pulled Pork and some delicious sandwiches, complete with fresh buns, BBQ sauce, and coleslaw.
You could even step it up a bit and make this BBQ Bacon Slaw!
Loaded BBQ and Cornbread Waffles
Dinner idea number two this week will use some of that gorgeous BBQ pork served over top of cornbread waffles.
Top it off with some coleslaw for a fabulous meal 🙂
BBQ Pulled Pork Quesadillas
These pork quesadillas are amazing, the sauce drizzled over top makes them extraordinary!
Smoked BBQ Pork Stuffed Jalapenos
This week’s fun weekend recipe is one of the BEST ways to use up leftover pulled pork!
BBQ Pork and Cornbread Stuffed Poblanos
Here’s a bonus recipe for ya, just in case you still have some leftover pork to use 🙂
