One of my favorite things to make each summer is a whole BBQ pork shoulder and have some pulled pork sandwiches!
It slow cooks for hours and so tender and juicy it just falls apart.
Another fun thing about making BBQ Pulled Pork is coming up with creative ways to use the leftovers 🙂 So that’s this week’s meal plan theme!
We are starting the week by making BBQ Pulled Pork and will use the leftovers in all of our other dinners this week 🙂
Dinner number one this week will be this BBQ Pulled Pork and some delicious sandwiches, complete with fresh buns, BBQ sauce, and coleslaw.
You could even step it up a bit and make this BBQ Bacon Slaw!
Dinner idea number two this week will use some of that gorgeous BBQ pork served over top of cornbread waffles.
Top it off with some coleslaw for a fabulous meal 🙂
These pork quesadillas are amazing, the sauce drizzled over top makes them extraordinary!
This week’s fun weekend recipe is one of the BEST ways to use up leftover pulled pork!
