Lazy Skillet Lasagna
Lazy Skillet Lasagna is a quick and easy lasagna recipe that’s perfect for any night!
Lasagna is one of those extra special meals that we have when there’s company or a special occasion around here.
Why?
Because it’s a little too time consuming for a weeknight meal after working all day in my opinion.
No layering, no spreading cheese, no boiling noodles, really little to no effort on your part at all.
BUT…you get all the cheesy, yummy goodness that comes with traditional lasagna.

How to make Lazy Skillet Lasagna
This dish starts with a very large oven safe skillet.
I am using my 12 inch cast iron skillet and it worked perfectly.
I cooked some ground Italian turkey sausage in olive oil and then added lots of fresh spinach leaves and some garlic, kosher salt, and pepper.
The spinach at first looked like WAAAAYYY too much.
But I pinky promise it will cook down just like this after about 5 minutes.
The reason I am adding spinach is because it’s a secret mom trick I use to get my kids to eat their veggies.
I also then feel a little better about indulging in all the cheese 🙂
Next up is adding a 24 ounce jar of tomato pasta sauce and 1/2 cup of red wine.
You could use water in place of the wine if you don’t have any.
But…most of my friends keep a bottle or two on hand.
And it’s a good excuse to sip on a glass with dinner.
We are using the oven ready lasagna noodles for this dish.
They are also sometimes called no boil noodles.
My box came in a 12 ounce size, but I only used half.
Perfect for next time I make this I will already have the noodles.
Break them apart and throw them right into the simmering sauce.
Let the noodles simmer for a few minutes and then stir in some ricotta cheese and mozzarella cheese.
Then dollop the rest of the ricotta over top like this…
Place the skillet into an oven set to 375 degrees for 35 minutes.
Sprinkle a little more mozzarella over top and bake another 5 to 10 minutes until the cheese is melted to perfection.
Sprinkle with fresh parsley if desired, and it’s always a hit to serve Lazy Skillet Lasagna with garlic bread!
We enjoyed this on the first snowy night of the year, which made it extra special 🙂

Lazy Skillet Lasagna
The easiest way to make a delicious lasagna, all in one skillet and super simple!
Ingredients
- 1 Tbsp olive oil
- 1 pound ground Italian sausage (or Italian turkey sausage)
- 6 oz fresh spinach leaves
- 2 Tbsps garlic paste or minced garlic
- 1 24 oz jar tomato pasta sauce/ marinara sauce (I used Ragu)
- 1/2 cup red wine (or water)
- 6 oz oven ready lasagna noodles (also called no boil lasagna noodles)
- 14 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- Optional: sprinkle parsley over top and serve with garlic bread
Instructions

Set a large, oven safe skillet (I used cast iron) over medium heat and add the olive oil. Once the olive oil is hot add the ground Italian sausage, cook 7 to 9 minutes breaking it apart as it cooks.

Drain excess grease and set back over medium heat. Add the spinach, kosher salt, pepper, and garlic. Cook 5 minutes, stirring occasionally.

Add the pasta/ marinara sauce and the 1/2 cup red wine (or water).

Break the oven ready lasagna noodles into pieces and stir them into the sauce. Let this simmer over medium low heat 7 minutes, stirring occasionally.

Stir in half of the ricotta and mozzarella cheeses. Spoon dollops of the remaining ricotta over top an inch or so apart over the lasagna.

Place the skillet carefully into a 375 degree oven for 35 minutes. Add remaining mozzarella cheese over top and bake 5 to 10 more minutes until cheese is melted.

Serve with garlic bread and parsley for garnish is desired.
