
Asian Chopped Chicken Salad with Peanut Dressing
Asian Chopped Chicken Salad is a great healthy dinner recipe, but also perfect for meal prepping!
There aren’t too many salads that I don’t love, but this one has to be one of my all time favorites.
Gorgeous colors, crunchy veggies, and a homemade peanut dressing that really brings an amazing Asian flavor.
This Asian Chopped Chicken Salad starts with chopped lettuce, red cabbage and cilantro, shredded carrots and red pepper, and shelled edamame.

The dressing is simple enough as well.
Whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, and garlic and ginger paste.

It takes at least a minute before it comes together, but I promise it will 🙂
Just keep whisking…just keep whisking…
Add some cooked, shredded chicken to the salad mix and some chopped peanuts and chow mein noodles to add some extra crunchiness.

In my opinion every salad needs a good crunch factor.
Serve with the yummy peanut dressing and enjoy!

A gorgeous and healthy salad with a blend of colorful Asian veggies
Ingredients
Asian Chopped Chicken Salad
- 3 cups chopped lettuce
- 2 cups chopped red cabbage
- 2 cups shredded carrots
- 1 cup chopped cilantro
- 1 cup shelled edamame
- 1 red bell pepper thinly sliced
- 2 cups cooked, shredded chicken
- 1/2 cup chow mein noodles
- 1/2 cup chopped peanuts
Peanut Dressing
- 1/4 cup smooth peanut butter
- 1/3 cup soy sauce
- 3 Tbsps honey
- 2 Tbsps rice vinegar
- 1 Tbsp sesame oil
- 1 Tbsp lime juice
- 1/2 Tbsp garlic paste
- 1/2 Tbsp ginger paste
Instructions
Asian Chopped Chicken Salad

Combine all ingredients in a large bowl and toss until evenly mixed. Serve with peanut dressing.
Note: For meal prepping this salad, divide into containers and put the peanut dressing in containers on the side.
Peanut Dressing

Whisk all ingredients together in a bowl until evenly mixed, approx 1 minute of whisking.
