BBQ Pork Loaded Fries
These BBQ Pork Loaded Fries became a new recipe using some of the leftovers.
When you smoke a whole BBQ Pulled Pork Shoulder you typically have A LOT of leftovers.
It’s a terrible problem to have really.
I am forced to come up with so many delicious and amazing ways to enjoy this leftover pulled pork and it’s just exhausting
đŸ˜‰ haha- insert sarcasm đŸ˜‰
How to Make BBQ Pork Loaded Fries
I went with waffle fries for these.
Seemed logical since there’s more flat space for maximum yumminess.
A bag of waffle fries goes on a baking sheet and just bake them according to the package directions.
Make sure you give them plenty of time to get nice and crispy.
Then top the fries with two cups of shredded cheese.
I went the extra mile and shredded from a block of colby jack cheese for extra meltiness compared to the already shredded cheese in a bag.
And then add some leftover pulled pork over top.
And if you don’t have leftovers, they sell already shredded pork in most grocery stores.
Put these back into the oven just until the cheese is nicely melted.
Mine didn’t take long, especially because the fries were already piping hot.
Top the fries with BBQ sauce, sour cream, and Sweet Pickled Red Onions.
I make these onions often to keep in the fridge and use them for nachos, tacos, wraps.
And now they are a new fave on loaded fries.
Serve BBQ Pork Loaded Fries right away and enjoy!

BBQ Pork Loaded Fries
BBQ Pork Loaded Fries have a layer of crispy baked waffle fries topped with leftover BBQ pulled pork, cheese, BBQ sauce, and pickled onions
Ingredients
- 1 24 oz bag frozen waffle fries
- 2 cups shredded cheese of choice (I used colby jack)
- 1 cup leftover pulled pork (or store bought pulled pork)
- 3/4 cup BBQ sauce
- 1/2 cup sour cream
- 1/2 cup pickled red onions (store bought or recipe link in post above)
- 2 Tbsps diced green onions
Instructions

Put the waffle fries in a single layer on a baking sheet. Cook in the oven according to the package directions.

Once the fries are cooked and crispy, top with the cheese and leftover pulled pork. Place back in the oven until the cheese is melted.

Drizzle the BBQ sauce and sour cream over top and add the pickled red onions and green onions.
