Taco Loaded Sweet Potato Wedges
Taco Loaded Sweet Potato Wedges is one of my new favorite dinner recipes!
The kids want taco night…again!
The husband and I are kind of sick of tacos.
I don’t want to make two dinners sooooo, what to do?
All moms have been in this situation I’m sure.
Here’s my solution…
Same ingredients, only difference is give the kids tortillas and BAM, everyone is happy 🙂
How to Make Taco Loaded Sweet Potato Wedges
Before you start browning up your taco meat and getting out your other taco toppings, just slice up two sweet potatoes.
And brush them with olive oil, cumin, chili powder, cinnamon, kosher salt and pepper.
Bake the sweet potato wedges at 425 for 20-25 minutes, turning half way through.
They get crispy and golden brown just like this.
I could eat them just like this as a side dish, but here comes the fun part…the toppings!
We just put taco meat, corn, sour cream, Cotija cheese, jalapenos, cilantro, pickled red onions ,and lime wedges.
I was thinking black beans and avocados would have been delicious too.
Topping possibilities are endless, really.
Obviously you’ll need a fork, and make sure you scoop up all the goodness in each bite!
Not a whole lot of extra work and everyone is happy.
Kids have their boring tacos and we get to eat Taco Loaded Sweet Potato Wedges!
This recipe will serve 4 adults.
Since just the husband and me were eating them we had plenty leftover that I packed up for lunch the next day!

Taco Loaded Sweet Potato Wedges
Loaded sweet potato wedges with lots of taco flavors
Ingredients
For the sweet potato wedges
- 2 sweet potatoes each cut into 8 wedges
- 2 Tbsp olive oil
- kosher salt, pepper, cumin, chili powder, cinnamon to taste
For the toppings
- 1 pound ground beef or ground turkey
- 1 packet taco seasoning
- 1 can corn
- 1 cup crumbled Cotija cheese (or cheese of choice)
- 1/2 cup sour cream
- Optional toppings: cilantro, lime wedges, jalapenos, pickled red onion, avocado, black beans
Instructions

Slice each sweet potato into 8 wedges and brush with olive oil, sprinkle with salt, pepper, cumin, chili powder, and cinnamon to taste.

Bake at 425 for 20-25 minutes, flip halfway through.

Brown up your ground beef or turkey in a pan over medium heat, breaking up the meat as it cooks for 5-8 minutes or until cooked through. Add taco seasoning (and water according to packet directions) and cook an additional 8-10 minutes over low heat.

Prepare your other toppings as the sweet potatoes and meat are cooking.

Top your sweet potato wedges with the taco meat and other toppings as desired.
