Cherry and Goat Cheese Chicken Salads
I made one of these Cherry and Goat Cheese Chicken Salads for dinner, and meal prepped the other one for a quick, healthy lunch!
This would be a great use of rotisserie or meal prepped chicken.
But I actually threw a seasoned chicken breast into the air fryer for 12 minutes for mine.

How to make Cherry and Goat Cheese Chicken Salads
Start with dividing some salad mix or chopped lettuce of choice between two bowls, or a bowl and a meal prep container.
I used arugula for mine.
Then add some cooked, diced chicken.

Then about a cup of pitted cherries.
Honestly, pitting them was not my favorite… but weeelllllll worth it for how great they are in this salad.

Finally, some walnuts, goat cheese crumbles, and balsamic vinaigrette.
I added this right to my dinner salad, but in a cup with a lid on the side for the meal prepped one.

Two meals for the effort of ONE… you can’t beat that!

Now I have one of my Cherry and Goat Cheese Chicken Salads for lunch tomorrow!

Cherry and Goat Cheese Chicken Salads
Cherry and Goat Cheese Chicken Salads is not your avaerage healthy salad recipe, easy to meal prep or enjoy right away with balsamic dressing!
Ingredients
- 4 to 5 cups arugula or salad mix of choice
- 1 1/2 cups cooked, diced or shredded chicken
- 2 ounces crumbled goat cheese
- 1 cup fresh cherries sliced in half, pits removed
- 1/4 cup walnuts
- 1/4 cup balsamic vinaigrette (I used Marzetti Simply Dressed Balsamic)
Instructions

Divide the lettuce between two bowls or meal prep containers. Top with chicken, goat cheese, cherries, and walnuts.

If enjoying right away drizzle the dressing over top, if meal prepping for later pack the dressing on the side in 2 ounce cups with lids.
