High Protein Sausage McGriddle Casserole
When McDonald’s came out with McGriddles, I was instantly hooked… this at home version of my favorite breakfast sandwich is on the healthier side with an extra boost of protein, you gotta check out High Protein Sausage McGriddle Casserole!
This could be a great weekend breakfast, breakfast-for-dinner, or slice and pack in containers for a meal prepped breakfast to warm up anytime.

How to make High Protein Sausage McGriddle Casserole
Start with a pound of maple breakfast sausage in a skillet over medium heat.
Cook for 7 to 9 minutes, breaking apart the sausage as it cooks.
While the sausage was cooking I started my eggs and milk in a bowl.

And cut a thawed package of frozen protein pancakes into inch pieces.

Then add half a cup of maple syrup, kosher salt, and pepper into the eggs and beat with a fork.

Next we will layer in a 9×13 greased casserole dish half of the pancakes, half of the sausage, and 1/2 cup shredded cheese.
Add another layer the same way… remaining pancakes, sausage, and cheese.

Then pour the egg mixture evenly over top.
Use the back of a fork or spatula to press down slightly and bake in a 375-degree oven for 35 to 40 minutes.

We served High Protein Sausage McGriddle Casserole with more maple syrup drizzled over each slice and with some hot sauce!

High Protein Sausage McGriddle Casserole
High Protein Sausage McGriddle Casserole is a healthier version of a McDonald's breakfast sandwich all in one pan with high protein pancakes!
Ingredients
- 1 pound ground maple breakfast sausage
- 8 eggs
- 1 1/4 cups milk
- 1/2 cup maple syrup
- kosher salt, pepper
- 1 (15.38-ounce) package Kodiak Power Flapjack Protein Pancakes (or another brand of protein pancakes) thawed, cut into inch pieces
- 1 cup shredded cheese of choice
- Optional: more maple syrup, hot sauce
Instructions

Set a large skillet over medium heat and add the maple sausage. Cook 7 to 9 minutes, breaking it apart as it cooks.

Crack the eggs in a large bowl and add milk, syrup, kosher salt, and pepper. Beat with a fork.

Spray a 9×13 casserole dish with nonstick spray and sprinkle evenly half of the pancake pieces, half of the sausage, and half of the cheese. Then another layer with remaining pancakes, sausage, and cheese.

Pour the egg mixture over top and use the back of a fork or spatula to press down on the casserole.

Bake in a 375 degree oven for 35 to 40 minutes. Serve with more maple syrup and/or hot sauce over top.
