One Pan Salmon Potatoes and Zucchini
One Pan Salmon Potatoes and Zucchini is a pretty healthy dinner recipe that will feed a large family, or perfect for when guests come over.
I got a 2 1/2 pound side of salmon from Costo and paired it with two of our favorite veggies for a complete meal all on one sheet pan.
How to make One Pan Salmon Potatoes and Zucchini
We are working with a few ingredients that have different cook times.
So start with a pound of diced gold or red potatoes on your sheet pan first.
And season them with olive oil, kosher salt, and pepper, plus your favorite seasoning blend if you have one.
Mix them evenly and bake in a 375-degree oven for 25 minutes.

While the potatoes were baking, I made a lemon garlic herb sauce.
Melted butter, minced garlic, lemon juice, and chopped fresh herbs of choice.
I had a mix of dill and parsley.

Scoot the partially cooked potatoes to one side of your sheet pan and place the large side of salmon in the center.
Then slice a zucchini into 1/4 inch slices and place them on the other side of the sheet pan.
Brush the lemon butter over top of everything and season the salmon and zucchini with kosher salt and pepper.

This will go back into the 375-degree oven for 20 to 25 more minutes.

This One Pan Salmon Potatoes and Zucchini was such an easy way to feed 6 of us, including two teenage boys so you know it’s filling and delicious!

One Pan Salmon Potatoes and Zucchini
One Pan Salmon Potatoes and Zucchini is an easy sheet pan dinner recipe with garlic lemon butter and herbs for a healthy, complete meal!
Ingredients
- 1 pound gold or redskin potatoes
- olive oil, kosher salt, pepper, seasoning blend of choice
- 1 (2 1/2-pound) side of salmon
- 1 zucchini sliced, 1/4 inch thick
- 4 tablespoons melted butter
- 2 tablespoons lemon juice
- 8 cloves garlic minced
- chopped fresh herbs of choice, I used dill and parsley
Instructions

Dice the potatoes with the skin on and put them on a lined baking sheet. Drizzle olive oil on the potatoes and season with kosher salt, pepper, and seasoning blend. Toss until combined and bake in a 375-degree oven for 25 minutes.

Carefully scoot the potatoes to one edge of the sheet pan and place the salmon in the center of the pan. Place the zucchini slices around the other edge of the sheet pan.

Mix together the butter, lemon juice, garlic, and fresh herbs. Brush over the salmon, zucchini, and any remaining can be brushed on the potatoes. Season salmon and zucchini with kosher salt, pepper, and seasoning blend of choice.

Place in a 375-degree oven for 20 to 25 minutes.
Note: My salmon had the skin on, but it easily peels off when serving.
