Baked Teriyaki Chicken Sandwiches
Gotta love quick and easy dinners, and these Baked Chicken Teriyaki Sandwiches were ready in just minutes.
I meal prepped the chicken and mushrooms as part of my latest Blackstone Griddle Meal Prep Series at IfYouGiveAGirlAGrill.com, where I share all of my outdoor cooking recipes.
You could also cook your own chicken and mushrooms for this meal, but I used them in several other meals this week.

How to make Baked Chicken Teriyaki Sandwiches
So either use already cooked chicken and mushrooms from the Blackstone griddle or in a skillet works too.
I added garlic, soy sauce, and teriyaki sauce to mine on the griddle.

Packed it alllll up and I used this for SIX meals throughout the week, these sandwiches being one of them.

Start with spicy mayo on the bottom of 4 ciabatta rolls.
Then cooked, diced or chopped chicken.

A little more teriyaki sauce.

Then Swiss cheese, or cheese of choice.
Cover these with foil and bake in a 350 degree oven for 12 minutes.

These Baked Chicken Teriyaki Sandwiches were quite the hit at dinner 🙂

Baked Teriyaki Chicken Sandwiches
Baked Teriyaki Chicken Sandwiches is part of my meal prep series so this dinner took only minutes to prepare, ciabatta sandwiches are so good!
Ingredients
- 4 ciabatta rolls sliced in half
- spicy mayo
- 1 cup cooked, diced or shredded chicken (my chicken was part of my meal prep series, details in post above)
- 1/2 cup cooked, sliced mushrooms (also part of my meal prep series)
- teriyaki sauce
- 4 slices Swiss cheese (or cheese of choice)
Instructions

Place the bottoms of the ciabatta rolls on a baking sheet and drizzle the spicy mayo on the bottom buns.

Add chicken, mushrooms, teriyaki sauce, and cheese. Add top buns and press down slightly. Cover with foil and bake in a 350 degree oven for 12 minutes.
