Blackstone Lemon Feta Zucchini
This fresh and easy side dish recipe for the griddle is so tasty, and perfect for summer garden veggies… it’s Blackstone Lemon Feta Zucchini 🙂
I made some seasoned salmon on the griddle at the same time for a complete griddle meal, but chicken or steaks would work too!
Just a few simple ingredients getting transformed into something magical is one of my favorite parts of cooking.
How to make Blackstone Lemon Feta Zucchini
First slice two zucchini into about 1/4 inch slices lengthwise.
But if you have one of those giant garden zucchinis, round slices work just as good.
I used my mandolin, but a sharp knife will get the job done too.
Squeeze some lemon over top and season both sides with kosher salt, pepper, and Italian seasoning.
Preheat your griddle to medium heat for a few minutes.
I added my salmon first for a few minutes before adding some cooking oil and the zucchini slices.
That way the whole meal would be done at once.
And I placed the thicker zucchini in the center where the griddle is hotter, and the thinner end strips off to the side a little.
Flip the zucchini after 2 to 3 minutes.
I mean, they would be incredible just like this!
But I squeezed more lemon over top and added some crumbled feta cheese right before serving them.
Blackstone Lemon Feta Zucchini is best eaten right away, and was the perfect side dish for our salmon.
Even my husband, who isn’t the biggest veggie guy, absolutely LOVED these!

Blackstone Lemon Feta Zucchini
Blackstone Lemon Feta Zucchini is a simple, light, and healthy side dish recipe for your griddle or flat top grill, perfect for summer!
Ingredients
- 2 medium size zucchini
- 2 to 3 lemon wedges
- kosher salt, pepper, Italian seasoning
- cooking oil of choice
- 1/3 cup crumbled feta cheese
Instructions

Slice the zucchini lengthwise, about 1/4 inch thick. Use a mandolin if possible for even slices. You should get 8 slices total.
Note: If you have a very large zucchini, you can slice it in rounds.

Squeeze some of the lemon on the zucchini and season them on both sides with kosher salt, pepper, and Italian seasoning.

Preheat your griddle to medium heat for a few minutes. Add some cooking oil of choice and lay the zucchini slices flat. Cook 2 to 3 minutes per side.
Note: If you are cooking salmon or chicken along with the zucchini, add them to the griddle a few minutes before so it's all done at the same time.

During the last minute squeeze more lemon on the zucchini and sprinkle the feta over top.
