Steak Bites with Avocado Chimichurri

Steak bites with avocado chimichurri is a great dinner recipe with an explosion of flavor cooked in either a skillet or outside on the griddle.

My chimichurri does have a few non traditional ingredients, but in my opinion that’s what makes it so dang good!

The chimichurri will be both the marinade for the steak and also the dipping sauce after adding the avocado.

How to make steak bites with avocado chimichurri

First we will make the chimichurri sauce in either a blender or food processor.

Add in a bunch of cilantro, a bunch of green onions, a jalapeno with some or all of the seeds removed, and some garlic cloves.

Then 1/2 cup of olive oil, a few tablespoons of red wine vinegar, a tablespoon of soy sauce, kosher salt, and pepper.

I am aware that the soy sauce is non traditional, but it does give that depth of flavor that sets this chimichurri apart from all the others I have tried.

Blend or pulse the chimichurri several times until it’s combined but still slightly chunky.

Earlier I cut 3 to 4 pounds of strip steak into bite size pieces and placed them in a gallon size plastic bag.

Add several spoonfuls of the chimichurri into the bag with the steak.

Massage the bag until the steak is coated and marinate in the fridge for several hours.

Add a small avocado to the blender or food processor and blend the sauce until smooth.

Store the sauce in a covered container and place in the refrigerator until ready to use as the dipping sauce.

When ready to cook the steak set a large skillet (or your Blackstone Griddle) to medium heat for several minutes.

Add some vegetable oil or avocado oil along with the marinated steak bites.

The steak bites will only take about 5 to 7 minutes total to cook, stirring and flipping a few times.

Ohhhh… might I suggest turning these into tacos the next night if you are lucky enough to have leftovers!

That’s TWO dinners in one if you plan ahead for those leftovers… boom, mom win!

Steak Bites with Avocado Chimichurri is an easy dinner recipe with homemade chimichurri sauce with avocado, so yummy!

Ingredients

  • 3 to 4 pounds steak (sirloin, strip steak, or flat iron)
  • 1 bunch cilantro
  • 1 bunch scallions or green onions
  • 1 jalapeno pepper some or all seeds removed depending on spice preference
  • 4 to 5 cloves garlic
  • 1/2 cup olive oil
  • 3 to 4 tablespoons red wine vinegar
  • 1 tablespoon soy sauce optional
  • kosher salt, pepper
  • 1 small avocado
  • 3 tablespoons vegetable or avocado oil

Instructions

  1. Trim any extra fat from the steak if needed and cut into bite size pieces. Place in a gallon size plastic bag.

  2. Put the cilantro, scallions or green onion, jalapeno pepper, garlic cloves, olive oil, red wine vinegar, soy sauce (if using), kosher salt, and pepper into a blender or food processor. Pulse the food processor a few times until the mixture is somewhat blended.

  3. Put a few spoonfuls of this mixture into the bag with the steak bites. Massage the bag until the steak is evenly coated and marinate in the fridge for a few hours or overnight.

  4. Put the avocado into the food processor and blend until smooth. Cover and refrigerate the sauce until ready to serve. Taste the sauce for seasoning and add more kosher salt or pepper if needed.

  5. Preheat a large skillet or Blackstone griddle to medium heat for several minutes. Once hot add the vegetable or avocado oil and the steak bites.

  6. Cook the steak bites 5 to 7 minutes total, flipping and turning them several times. Serve with the avocado chimichurri sauce for dipping.
