This easy Air Fryer Pickle Brined Chicken recipe had that extra something special that my family just couldn’t figure out.

Something magical happens when you brine chicken, or really any cut of meat.

It’s the perfect way to use leftover pickle juice.

And we had a lot of it due to devouring these Grillo’s Pickle Chips like crazy.

And bonus points to this brand for including fresh garlic and dill in the brine. YUM!

The brine not only adds flavor, and a bit of sweetness from the brown sugar…but also creates the most moist and juicy chicken ever đŸ™‚

How to Make Air Fryer Pickle Brined Chicken

Allow some time for the chicken to brine by either making this the night before.

Or even in the morning so it has several hours to soak up this pickle brine.

Dice the chicken into bite size pieces and put them in a gallon size bag.

Then add the pickle juice and brown sugar.

Place the bag with the chicken in the fridge for several hours or overnight.

When you are ready to air fry the chicken, crack two eggs in a bowl and beat them with a fork.

Then put a cup of breadcrumbs, Old Bay seasoning, kosher salt, and pepper in a separate bowl.

Take the chicken out of the bag and set up the breading station like this with the chicken, egg, and seasoned breadcrumbs.

Dip each piece of chicken into the egg first. then into the breadcrumbs to coat them evenly.

And then into the air fryer basket with a spray of olive oil cooking spray over top.

These will cook at 400 degrees for about 15 to 18 minutes.

Ingredients

  • 1 1/2 pounds chicken breast
  • 1 1/2 cups pickle juice
  • 1/4 cup brown sugar
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 Tbsp Old Bay seasoning
  • kosher salt, pepper
  • olive oil cooking spray
  • Optional: dipping sauce such as ranch or honey mustard

Instructions

  1. Cut the chicken into bite size pieces and put them in a gallon size plastic bag.

  2. Add the pickle juice and brown sugar to the bag with the chicken. Massage the bag until combined. Place in the fridge for several hours or overnight.

  3. When ready to make the chicken crack the eggs in a bowl and beat with a fork. Put the breadcrumbs, Old Bay, kosher salt, and pepper in a separate bowl and stir until combined.

  4. Dip each pieces of chicken into the egg, then into the breadcrumbs and press the breadcrumbs into the chicken so they stick. Place each piece of chicken into the air fryer basket.

  5. Spray the chicken with the olive oil spray and set the air fryer to 400 degrees for 15 to 18 minutes.

  6. Serve with dipping sauce of choice if desired.
