Chili Lime Shrimp Kabobs
This Chili Lime Shrimp Kabobs recipe come with a bonus dipping sauce made with Greek yogurt, cilantro, and avocado.
One of my favorite healthy/light dinners is grilled shrimp.
A few simple seasonings and a few minutes on the grill and dinner is served 🙂
How to Make Chili Lime Shrimp Kabobs
Put a pound of jumbo shrimp, that’s been peeled and deveined, on four kabob skewers.
Since my skewers are wood, I soaked them for an hour in water.
This will prevent them from burning.
But since these cook for only 5 minutes, it’s ok if you skip the soaking.
After putting the shrimp on the skewers, make the seasoning.
I am using chipotle chili powder, which is a bit spicier than regular chili powder.
Add olive oil, lime juice, chili powder, kosher salt, and pepper to a small bowl.
Mix it until it’s combined and brush on both sides of the shrimp kabobs.
Once it’s all coated in the chili lime mixture, preheat the grill to medium high heat.
And once it’s nice and hot put the kabobs on the grill grate.
These will only cook 2 to 3 minutes per side.
I made the dipping sauce for these as the grill was preheating.
Put 1/2 cup plain Greek yogurt or sour cream, half of an avocado, more lime juice, fresh cilantro, kosher salt, and pepper in a blender or food processor.
Blend until it’s smooth and just set aside until ready to serve the shrimp.

I also served with some extra lime wedges on the side.
The spicy, hot shrimp dipped in the cool, refreshing yogurt sauce was the perfect combo 🙂

Ingredients
Chili Lime Shrimp Kabobs
- 1 pound jumbo shrimp peeled and deveined
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- 1/2 Tbsp chili powder
- kosher salt, pepper
Avocado Cilantro Dipping Sauce
- 1/2 cup plain Greek yogurt or sour cream
- 1/2 avocado
- 1/2 cup cilantro
- 1 Tbsp lime juice
- kosher salt, pepper
Instructions

Put the shrimp on 4 kabob skewers.

Put the olive oil, lime juice, chili powder, kosher salt, and pepper in a small bowl and stir until combined. Brush this mixture on both sides on the shrimp kabobs.

Preheat the grill to medium high. Once heated, put the shrimp kabobs on the grill for 2 to 3 minutes per side.

Serve with the Avocado Cilantro Dipping Sauce if desired.

Put all ingredients in a blender or food processor and blend until evenly combined. Serve with the shrimp for dipping.
