Chorizo Beer Cheese Dip

Well, friends I’ve got another great appetizer or game day recipe for ya… Chorizo Beer Cheese Dip!

Tis the season for lots of holiday parties and get togethers.

Plus we are smack in the middle of football season, which means lots of game day celebrations.

Chances are these parties require you to “bring a dish to share”.

This dip is great served warm or at room temp.

If you do bring to a party to share just put in a container or dish that’s microwave or oven safe and warm it when you arrive.

However, if warming it is not an option, it’s still REALLY good at room temp.

How to make Chorizo Beer Cheese Dip

Start with a pound of ground chorizo sausage in a large skillet over medium heat.

It will take five minutes or so to cook through, and break it apart as it cooks with a wooden spatula.

Remove the sausage from the skillet and drain on paper towels.

In the same skillet (still over medium heat) add some olive oil, a diced onion, kosher salt, and pepper.

Cook the onion for about five minutes.

Add fresh minced garlic and a cup of beer and let that bubble away over medium heat for a few more minutes.

Now the cooked chorizo, a can of Rotel, and a block of cream cheese join the party 🙂

Stir it all together until it gets evenly mixed and the cream cheese starts to melt in.

Chorizo Beer Cheese Dip

Lastly, stir in two cups of shredded cheese.

I used a Mexican blend, but any just about any cheese will be perfect.

You could also garnish with fresh cilantro if you’re feeling fancy.

Serve Chorizo Beer Cheese Dip with tortilla chips or Fritos Scoops, or heck…serve it with both!

Chorizo Beer Cheese Dip

Chorizo Beer Cheese Dip is such a unique and flavorful dip with only a few simple ingredients and very easy to make, perfect with Fritos!

Ingredients

  • 1 pound ground chorizo sausage
  • 1 Tbsp olive oil
  • 1 onion diced
  • kosher salt, pepper
  • 2 to 3 cloves garlic minced
  • 1 cup beer of choice
  • 1 10 oz can Rotel
  • 8 oz cream cheese
  • 2 cups shredded cheese of choice(I used Mexican blend)
  • Optional: cilantro for garnish, tortilla chips and/or Fritos Scoops

Instructions

  1. In a large skillet over medium heat add the chorizo sausage. Cook 4 to 6 minutes, breaking it apart as it cooks. Remove from skillet and place on paper towels to drain excess grease.

  2. Add the olive oil and diced onion into the skillet over medium heat, season with kosher salt and pepper. Cook 4 to 6 minutes. Add the garlic and beer, cook 4 more minutes, stirring occasionally

  3. Add the cooked chorizo, Rotel, and cream cheese to the skillet and stir until evenly mixed. Cook 3 to 4 minutes, stirring occasionally.

  4. Turn the heat off and stir in the shredded cheese until melted and evenly combined.

  5. Garnish with cilantro if desired and serve with tortilla chips or Fritos Scoops for dipping.
