Italian Sub Crostini

Italian Sub Crostini is a simple appetizer recipe that is gorgeous, unique, and flavorful.

Everything you love in an Italian Sub, in an appetizer form.

If serving right away go ahead and top them for your guests.

But if you’re transporting serve with the toasted bread on the side and everyone can top their own.

How to Make Italian Sub Crostini

Start with your choice of bread (baguette, sourdough, Italian, etc.) and slice into 1 inch thick pieces.

Brush with olive oil, a little kosher salt and pepper, into a 400 degree oven for 5 minutes.

You want them just a little toasty, but still soft in the middle.

Otherwise crumbs will be a flyin’ as you eat them if they are too toasty.

What dressing normally comes on a sub?

Usually mayo or Italian dressing, I couldn’t decide so I went with both.

I did half light mayo and half fat free Italian dressing.

(cutting calories where I can because I am NOT giving up the cheese part of this)

The topping is a combination of everything you would have on an Italian sub…

salami, turkey pepperoni, ham, provolone, lettuce, tomato…all diced up into tiny pieces.

If you’re wondering where the tomato is in this picture, it’s because

I topped mine with tomato later because my husband doesn’t like tomato (he puts up with a lot from me, so it’s the least I can do for him).

Italian Sub Salad

My advice would be add the dressing just a little at a time, you don’t want to over dress it.

You can always add more, but it’s hard to take it away.

Once it’s dressed to perfection pile this yumminess onto a beautiful piece of the toasted bread and enjoy!

Pepperoncinis on the side were a nice touch, or even some sliced up banana peppers.

Italian Sub Meal Prep Salads…

Chances are you will have some ingredients leftover.

Prep them into containers for lunches or a quick meal on the go.

Italian Sub Salads start with a bed of lettuce, leftover provolone cheese, tomato, ham, salami, pepperoni, and pepperoncini peppers.

I even cut up the leftover bread for soft croutons.

A little to go cup of fat free Italian dressing on the side and you’re done.

Ingredients

  • 1 loaf baguette or italian bread
  • olive oil, kosher salt, pepper
  • 1/4 cup mayo or light mayo
  • 1/4 cup italian or fat free italian dressing
  • 1 cup iceburg lettuce chopped
  • 1 cup deli ham chopped
  • 1 cup pepperoni or turkey pepperoni chopped
  • 1 cup salami chopped
  • 1 cup provolone cheese chopped
  • 1/2 cup tomato chopped
  • pepperoncinis or banana peppers

Instructions

  1. Cut the bread into 1 inch slices. Place on a baking sheet and brush with olive oil, salt, and pepper. Bake at 400 degrees for 5 minutes.

  2. Mix the mayo and Italian dressing together and set aside.

  3. In a large bowl combine lettuce, ham, pepperoni, salami, cheese, and tomato. Add a few spoonfuls of the dressing until the mixture is perfectly dressed.

  4. Top the mixture onto the toasted bread if serving right away, or on the side for everyone to top their own if serving at a later time.
