Chorizo Sloppy Joe Breakfast Sliders
These Chorizo Sloppy Joe Breakfast Sliders are insanely delicious, easy to make on your Blackstone griddle or skillet, and with juuuuust the right amount of spiciness.
I used my E-series Indoor Blackstone Griddle to make them all at once on the large cook space.
And seasoned them up with my Blackstone Hatch Chile and Cheddar seasoning, it’s optional of course… any favorite seasoning blend that you have will work.

How to make Chorizo Sloppy Joe Breakfast Sliders
Start with your Blackstone griddle or skillet on your stove over medium low heat, an indoor griddle should be set to 400 degrees.
Add a pound of chorizo sausage to cook, breaking it apart with spatulas.

I cracked 8 eggs in a bowl with kosher salt, pepper, and my seasoning blend.
Beat the eggs with a fork until combined and slowly pour the eggs over the chorizo.
Scramble it all together and once the eggs are cooked add 2 cups of shredded cheese.

And also some maple syrup and hot sauce.
I toasted my slider buns on the griddle with some butter and assembled the yummy sandwiches.

Chorizo Sloppy Joe Breakfast Sliders
Chorizo Sloppy Joe Breakfast Sliders, spicy breakfast sandwich recipe for your indoor griddle or skillet, sloppy Joes with a breakfast twist!
Ingredients
- 1 tablespoon butter
- 1 (12-pack) slider buns of choice
- 1 pound chorizo sausage
- 8 eggs
- kosher salt, pepper, seasoning blend of choice
- 2 cups shredded cheese of choice
- 1/4 cup maple syrup
- hot sauce of choice
Instructions

Preheat your outdoor griddle or skillet indoors to medium-low heat, if using an indoor griddle preheat to 400 degrees.

Add butter and once melted place the slider buns cut side down to toast. If using a skillet you may need to cut them and do this in separate batches.

Once toasted, remove and set aside. Add the chorizo sausage and cook 5 to 7 minutes, breaking it apart with spatulas as it cooks.

While chorizo is cooking, crack the eggs into a bowl, add kosher salt, pepper, and seasoning blend of choice. Beat with a fork.

Once chorizo is no longer pink, pour eggs over top and use spatulas to scramble and cook them together with sausage for 2 to 3 minutes.

Add cheese, maple syrup, and hot sauce. Cook 1 more minute and mix together. Serve on slider rolls.
