Crock Pot Street Corn Chicken

A creamy, cheesy, slightly spicy chicken dinner recipe all made in the slow cooker is what I am sharing today… Crock Pot Street Corn Chicken.

I took inspiration from Mexican street corn ingredients and transformed them into a complete, easy slow cooker meal.

This is one of those dinners that is BIG on flavor, and somewhat healthy if using plain Greek yogurt in place of the mayo.

We topped ours with hot sauce to add some heat and crushed Fritos for some crunchy texture.

How to make Crock Pot Street Corn Chicken

First put 2 pounds boneless, skinless chicken thighs or breasts into the Crock Pot.

Add a diced onion, minced garlic, about 2 teaspoons each Tajin and chili powder, plus kosher salt and pepper.

Then set your slow cooker to low for 6 hours.

Shred the chicken right in the Crock Pot with two forks.

Then add 2 cans of drained corn, a can of Rotel tomatoes with green chiles, 1/3 cup of sour cream and either plain Greek yogurt or mayo, plus some fresh cilantro.

Let this cook on low for about 2 more hours, stirring a few times to combine allllll this yumminess.

Finally add some cotija cheese, cilantro, and more Tajin over top.

You can serve Crock Pot Street Corn Chicken in bowls or on plates, totally up to you 🙂

Crock Pot Street Corn Chicken is a complete meal in the slow cooker, this one uses Greek yogurt to cut some calories for a healthier version!

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 onion diced
  • 6 cloves garlic minced
  • 1 1/2 to 2 teaspoons Tajin seasoning (plus more to sprinkle over top)
  • 1 1/2 to 2 teaspoons chili powder
  • kosher salt, pepper
  • 2 (15-ounce) cans corn kernels drained
  • 1 (10-ounce) can Rotel tomatoes with green chiles
  • 1/3 cup sour cream
  • 1 (5.3-ounce) container plain Greek yogurt (or mayo)
  • 1/2 cup chopped cilantro (plus more to sprinkle over top)
  • 1/2 cup cotija cheese
  • Optional toppings: jalapenos, crushed Fritos or tortilla chips, hot sauce

Instructions

  1. Put chicken, onions, and garlic in the slow cooker. Season with Tajin, chili powder, kosher salt, and pepper. Turn slow cooker on low for 6 hours.

  2. Add corn, Rotel tomatoes, sour cream, Greek yogurt, cilantro, more kosher salt, and pepper. Let cook in Crock pot on low 1 to 2 more hours, stirring a few times.

  3. Sprinkle more Tajin, cilantro, and cotija cheese over top before serving with optional toppings such as jalapenos, crushed Fritos or tortilla chips, and/or hot sauce.
