Creamy Lemon Parmesan Kale

This creamy lemon parmesan kale side dish recipe seems more like a decadent treat rather than being forced to eat those veggies.

Kale is definitely one of those super foods that I try to eat more of, but getting the family to do the same can be a struggle.

So when I made this for a side dish last week I was fairly certain I would get some eye rolls and maybe even a complaint or two.

Much to my surprise the kids, and shockingly even my husband, really liked it… not just tolerated it… they actually LIKED it!

How to make creamy lemon parmesan kale

Yeah, yeah… this does have some heavy cream and cheese but life is all about balance, am I right?!

And for the kale I bought a huge bag that has already been pre washed and cut.

Start with a skillet over medium heat and add some olive oil.

Then in goes a small diced onion, kosher salt, pepper, and crushed red pepper flakes.

Let the onion cook for 3 to 4 minutes stirring a few times.

Next add 6 to 7 cups of the chopped kale, freshly chopped garlic, and more kosher salt and pepper.

I added my kale a cup or two at a time and let it wilt down before adding more.

It will seem like SOOOO much kale at first, but I promise it will cook down to almost nothing.

Cook the kale for 3 to 4 minutes then add in some heavy cream.

Cook the kale with the cream for a few more minutes until the kale is cooked and the cream has thickened into a nice sauce.

Finally remove from heat and stir in 1/2 cup of Parmesan cheese, a tablespoon of lemon zest, and a tablespoon of lemon juice.

Taste for seasoning and add more kosher salt, pepper, and/or crushed red pepper flakes if needed.

Literally just a few minutes in a skillet and you have a healthy side dish of creamy lemon parmesan kale!

We had this with some fish that I made in the air fryer, but it would be good with any chicken or steak dinner of course.

It sounds bizarre to say but I truly enjoyed my leftovers just as much the next day!

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion (or 1/2 regular size onion) diced
  • kosher salt, pepper, crushed red pepper flakes
  • 3 cloves garlic minced
  • 6 to 7 cups trimmed, chopped kale
  • 3/4 cup heavy cream
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Set a large skillet over medium heat. Add the olive oil, diced onion, kosher salt, pepper, and crushed red pepper flakes. Cook 3 to 4 minutes stirring a few times.

  2. Add the garlic, kale, more kosher salt, pepper, and crushed red pepper flakes. Cook 3 to 4 minutes stirring a few times.

  3. Add the heavy cream and cook a few more minutes until the kale is cooked and the cream has thickened slightly.

  4. Turn the heat off and stir in the lemon zest, lemon juice, and parmesan cheese. Stir until the cheese is melted, taste for seasoning and add more kosher salt and pepper if needed.
