Thai Peanut Chicken Pizza
My daughter has been begging me to make a recipe for Thai Peanut Chicken Pizza ever since she’s been back from college she misses it from a pizza place they had on campus.
She described it to me and I recreated it as best I could.
The stumper part for me was which cheese to use. I went with gouda, but could only find it in slices.
Still I made it work and this dinner was fabulous!
How to Make Thai Peanut Chicken Pizza
So you have options as far as the dough.
This is frozen dough from the grocery store that I rolled out out.
You could also stop by a pizza place near you and ask to buy just a large pizza dough. I actually do this often.
There’s also precooked pizza doughs at the store.
For the sauce I mixed together 1/3 cup sweet Thai chili sauce and 1/3 cup Thai peanut sauce.
Then spread that evenly over the dough.
Read the dough directions first because some require you to bake for a few minutes before topping it.
Next goes the slices of cheese and some cooked, diced chicken.
It looks weird with the slices but I used what I had.
And I pinky promise we did not even notice after it was cooked.
Finally add some thin sliced red peppers and carrots.
Into a 400 degree oven for 15 to 18 minutes is what my dough directions said.
Precooked doughs will have a slightly shorter cook time.
It comes out bubby and cheesy!
Top with lots of fresh chopped cilantro and serve right away.

Optional toppings if you’re feeling adventurous could be a squeeze of lime, sriracha, or even crushed peanuts for a little crunch.

Thai Peanut Chicken Pizza
Thai Peanut Chicken Pizza has a sweet and spicy sauce and topped with gouda cheese, grilled chicken, and fresh veggies for a delicious dinner
Ingredients
- 1 large pizza dough (or precooked pizza crust)
- 1/3 cup sweet Thai chili sauce
- 1/3 cup Thai peanut sauce
- 8 oz gouda cheese (shredded or sliced)
- 1 cup chopped, cooked chicken
- 1/4 cup sliced red pepper
- 1/4 cup sliced carrots
- 1/2 cup chopped cilantro
- Optional toppings: lime wedges, sriracha, and/or crushed peanuts
Instructions

Roll the pizza dough on a round baking sheet (or if using already cooked, place on the round baking sheet).

Mix the sweet Thai chili sauce and Thai peanut sauce together and spread evenly on the pizza dough.

Add the cheese, chicken, red pepper, and carrots. Bake in a 400 degree oven for 15 to 18 minutes (or if using already cooked for 9 to 11 minutes).

Sprinkle the cilantro over top and serve right away, add additional toppings such as lime wedges, sriracha, and/or crushed peanuts.
