Spicy Chorizo Sliders were super good and easy to make!
A fun twist for burger night was something we tried and loved at our house.
We used chorizo sausage instead of ground beef.
And to mix it up even a little more, we used cute little slider buns instead of traditional size burgers.
Chorizo is pork sausage that has garlic, chili powder, paprika, cinnamon, and red pepper flakes.
You can buy ground chorizo in most grocery stores in the pork section of the meat department.
I love using it because I literally do not need to add anything to it.
How to Make Spicy Chorizo Sliders
So when making these little slider patties, just form the ground chorizo with your hands.
Try to aim for the size to be just slightly bigger than the slider bun itself.
Because they will shrink up a bit when cooking.
Preheat the grill to medium high heat, and once preheated put the patties on the grill grate.
They will cook 4 to 5 minutes per side.
You could easily make these in a skillet over medium high heat for the same amount of time.
Just look at how gorgeous the color is from all the spices.
And those grill marks are pretty nice too 🙂
Add half a slice of cheese over each one.
I ripped mine in half so they were the perfect size.
Pepper jack was my cheese of choice in keeping with the spicy theme.
Any cheese would of course be great.
Once the cheese is melted we are ready to assemble these sliders.
Place each one on a slider bun.
Or in this case I cut King’s Hawaiian Sweet Rolls in half.
The little bit of sweet from the rolls was heavenly with the spiciness of the chorizo.
Add toppings of choice such as BBQ sauce, spicy mayo, Sweet Pickled Red Onions, or pickles jalapenos.

Spicy Chorizo Sliders
Spicy Chorizo Sliders only have a few ingredients but are big on flavor, a perfect game day snack or fun and easy to make dinner idea
- 1 pound chorizo sausage
- 3 slices pepper jack cheese
- 6 slider buns
- Optional toppings: spicy mayo, BBQ sauce, pickled jalapenos, pickled red onions
Form the chorizo into 6 patties, just slightly bigger than the slider buns.
Preheat your grill to medium high heat. Once heated put the chorizo patties on the grill for 4 to 5 minutes per side. Put half a slice of cheese on each patty during the last minute.
Serve the chorizo patties on the slider buns and add additional toppings such as spicy mayo, BBQ sauce, pickled jalapenos, or pickled red onions if desired.
