Turkey Brie and Cranberry Paninis
Turkey Brie and Cranberry Paninis are for sure a leftover Thanksgiving-ish recipe and not a traditional mid-summer dinner.
Well, let me explain…
You’d think it was Thanksgiving in July around here!
In November when turkeys are on sale I buy two.
One for Thanksgiving, and one to freeze to use for sandwiches and such.
This 15 pound turkey was a steal at only five bucks!
So I smoked it using my Beer Brined Smoked Turkey recipe and we have been enjoying all sorts of turkey yumminess this week đŸ˜‰
Brie cheese is a treat, so creamy and melty…I knew I had to use it in these sandwiches đŸ™‚
How to make Turkey Brie and Cranberry Paninis
Slice some turkey, brie cheese, and thinly slice an apple to start.
Then set out your rolls or buns of choice and top each of the bottom buns with turkey, and season with kosher salt and pepper.
There’s a lot of sweetness in these paninis so the kosher salt and pepper help balance the sweetness.
Then pile on the brie cheese slices and apple slices.
Top each with some whole berry cranberry sauce.
And place on a panini press over medium high heat.
Put the top buns on right before the panini press to avoid them getting soggy from the cranberry sauce.
These paninis take about 4 to 5 minutes total on the press.
When you see the cheese melting out of the sandwich they are done!
Hard to believe how big these were to start and get pressed down to the perfect size all melted together.
Turkey Brie and Cranberry Paninis are an amazing combo of flavors and one of my favorite leftover meals ever!

Turkey Brie and Cranberry Paninis
Turkey Brie and Cranberry Paninis are a delicious sandwich with creamy brie cheese, tangy cranberry sauce, and the perfect way to use leftover turkey!
Ingredients
- 6 buns or rolls
- 1 pound thick sliced turkey (I used leftover whole turkey)
- kosher salt, pepper
- 8 oz brie cheese cut into slices
- 1 apple cut into thin slices
- 1 cup whole berry cranberry sauce
Instructions

On the bottom slice of each roll add the thick cut turkey slices and sprinkle with kosher salt and pepper.

Top each with the brie cheese, thin apple slices, and whole berry cranberry sauce. Put the top bun on right before putting on the panini press.

Preheat a panini press to medium high heat. Place two sandwiches on the press and close the lid, pressing down slightly. Keep them in the press for 4 to 5 minutes. Remove and repeat with the remaining sandwiches.
