Caribbean Chicken Sweet Potato Bowls
Caribbean Chicken Sweet Potato Bowls is a healthy, high protein lunch or dinner recipe part of my Blackstone griddle meal prep series!

How to make Caribbean Chicken Sweet Potato Bowls
First put diced chicken in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning, garlic, olive oil, soy sauce, lime juice, and brown sugar.
Massage the bag until combined and marinate in your fridge for at least an hour, I marinated mine overnight.

Also, dice a sweet potato with skin on and put in a bowl.
Add olive oil, kosher salt, pepper, and Caribbean seasoning to the diced sweet potatoes and toss until combined.
I cooked mine on the Blackstone griddle, but you do have a few cooking options.
Obviously shown below are sweet peppers, but that’s from my meal prep series… I would have added the peppers to this bowl but I used them in the other meals and there were no peppers left.

Just follow one of these cooking directions-
Air Fryer- Put the sweet potato and chicken in your air fryer and cook for 12 minutes at 380 degrees, if sweet potatoes need more time just remove chicken and air fry sweet potatoes longer.
Sheet Pan- Put the sweet potato and chicken on a lined baking sheet and bake at 400 degrees for 25 minutes, if sweet potatoes need more time just remove chicken and bake sweet potatoes longer.
Blackstone Griddle- Preheat your griddle to medium. Add cooking oil, sweet potatoes, a little water, and cover with melting dome for 5 minutes. Remove dome a few times to mix with spatulas and add more water before covering again. Set the dome aside. Add more cooking oil and the chicken to an empty griddle space, cook both chicken and sweet potatoes 10 more minutes keeping them separate.

Assemble the bowls with sweet potatoes, chicken, and cottage cheese.
Drizzle hot honey over top and additional toppings such as cilantro lime taco sauce, cilantro, and/or a lime wedge to squeeze over top.

Caribbean Chicken Sweet Potato Bowls

Ingredients
- 3/4 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- kosher salt, pepper, Caribbean Jerk seasoning blend of choice
- 3 cloves garlic minced
- 1 tablespoon olive oil (plus more for the sweet potato)
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 large sweet potato
- 3/4 cup cottage cheese
- hot honey
- Toppings of choice: I used a cilantro lime taco sauce, cilantro, and a lime wedge to squeeze over top

Note- Since my chicken was already cooked, I just cooked my sweet potatoes by themselves in the air fryer for 15 minutes at 380 degrees.
