Garlic Herb Salmon and Zucchini
An easy one pan dinner for the oven or your Traeger pellet grill, I can’t wait to share this Garlic Herb Salmon and Zucchini recipe with you!
Summer is the perfect time to make this meal with all the garden-fresh zucchini and herbs.

How to make Garlic Herb Salmon and Zucchini
I have a 2-pound side of salmon that I got from Costco… and it’s gorgeous!
First melt some butter and add in plenty of lemon juice and fresh minced garlic.

Then chop about 1/2 cup of fresh herbs.
I had basil, parsley, and thyme… but rosemary or chives would be great additions.

Season the butter with kosher salt, pepper, crushed red pepper flakes, and Italian seasoning blend.

Spoon some of the butter right on the salmon.
And toss the rest with 2 medium size zucchini that have been sliced, about 1/4 inch thick.

Place the seasoned zucchini around the salmon on the baking sheet.

Sprinkle a little more kosher salt and pepper over top and this is ready for either the oven or your Trager pellet grill.

Either cooking method you’ll set it to 375 degrees and cook for 20 to 25 minutes.

Garlic Herb Salmon and Zucchini
Garlic Herb Salmon and Zucchini is a one pan meal for an easy weeknight dinner recipe, bake in the oven or on your Traeger pellet grill!
Ingredients
- 4 tablespoons melted butter
- 2 tablespoons lemon juice
- 6 cloves garlic minced
- 1/2 cup chopped, fresh herbs of choice (I used parsley, thyme, and basil)
- kosher salt, pepper, Italian seasoning blend, crushed red pepper flakes (optional)
- 1 (2-pound) side of salmon
- 2 medium zucchini sliced 1/4 inch thick
Instructions

Put the melted butter, lemon juice, garlic, herbs, kosher salt, pepper, Italian seasoning, and red pepper flakes (if using) in a medium bowl. Stir until combined.

Put the salmon on a large, lined baking sheet. Spoon half of the lemon garlic butter over the salmon.

Put the sliced zucchini in the bowl with remaining butter and toss until combined. Place the zucchini around the salmon on the baking sheet. Pour any remaining butter from the bowl over top and season with just a little more kosher salt, pepper, and Italian seasoning.

Oven: Place in a 375-degree oven for 20 to 25 minutes.
Traeger Pellet Grill: Set the grill to 375 degrees. Place the baking sheet on the grill grate for 20 to 25 minutes.
