Bacon Cranberry Green Beans

Cranberry Bacon Green Beans is great side dish recipe for a holiday or to feed a crowd.

Or you can easily cut the recipe in half for an easy weeknight side dish.

Sweet and salty flavors with French cut green beans topped with creamy goat cheese… what’s not to love?!

How to make Bacon Cranberry Green Beans

First microwave the pouches of French cut green beans according to the package directions.

And if yours did not come in microwavable pouches, just boil them for 5 minutes.

Then cut 8 to 10 slices of bacon into a large skillet over medium heat.

Cook the bacon for 6 to 7 minutes, then remove the bacon and set it aside.

Also remove some, but not all, of the bacon grease.

Next add a diced onion to the same skillet along with kosher salt, pepper, and Old Bay seasoning.

If you don’t have Old Bay, any seasoning blend of choice will do.

Cook the onions for a few minutes, then add in some butter and the two pounds of green beans.

Season them with more kosher salt, pepper, and Old Bay.

And cook for 6 to 7 minutes, stirring a few times.

Finally add in the cooked bacon and a cup of dried cranberries.

Cook this for about 2 more minutes, stirring together.

Taste for seasoning and add more kosher salt, pepper, and Old Bay if needed.

Bacon Cranberry Green Beans is a holiday worthy side dish recipe, but also easy enough to serve as a simple weeknight side dish!

Ingredients

  • 2 16 ounce bags French green beans (mine came in a microwaveable steaming bag)
  • 8 to 10 slices bacon
  • 1 onion diced
  • kosher salt, pepper, Old Bay seasoning (or seasoning blend of choice)
  • 4 tablespoons butter
  • 1 cup dried cranberries
  • Optional toppings: goat cheese crumbles, slivered almonds

Instructions

  1. Cook the green beans in the steaming bag in the microwave according to package directions. Mine cooked for 2 1/2 minutes each.

    Note: If you have regular cut green beans trim them if needed. And if you don't have yours in a steaming bag boil them in salted water for 5 minutes, drain and set aside.

  2. Set a large skillet over medium heat and use kitchen scissors to cut the bacon into the skillet in bite size pieces. Cook 6 to 7 minutes, stirring a few times. Remove the bacon and drain some of the bacon grease, leaving some in the skillet.

  3. Add the diced onion, kosher salt, pepper, and Old Bay seasoning to the skillet. Cook 4 to 5 minutes, stirring a few times.

  4. Add the butter, green beans, more kosher salt, pepper, and Old Bay. Cook 6 to 7 minutes, stirring a few times.

  5. Add the bacon crumbles and dried cranberries. Cook 2 more minutes or until the green beans are cooked how you like. Taste for seasoning and add more kosher salt, pepper, and Old Bay if needed.

  6. Top with goat cheese and/or almonds if desired.
