Sweet and salty flavors with French cut green beans topped with creamy goat cheese… what’s not to love?!
How to make Bacon Cranberry Green Beans
First microwave the pouches of French cut green beans according to the package directions.
And if yours did not come in microwavable pouches, just boil them for 5 minutes.
Then cut 8 to 10 slices of bacon into a large skillet over medium heat.
Cook the bacon for 6 to 7 minutes, then remove the bacon and set it aside.
Also remove some, but not all, of the bacon grease.
Next add a diced onion to the same skillet along with kosher salt, pepper, and Old Bay seasoning.
If you don’t have Old Bay, any seasoning blend of choice will do.
Cook the onions for a few minutes, then add in some butter and the two pounds of green beans.
Season them with more kosher salt, pepper, and Old Bay.
And cook for 6 to 7 minutes, stirring a few times.
Finally add in the cooked bacon and a cup of dried cranberries.
Cook this for about 2 more minutes, stirring together.
Taste for seasoning and add more kosher salt, pepper, and Old Bay if needed.
I topped our Bacon Cranberry Green Beans with crumbled goat cheese 🙂
Some toasted almonds would also be an amazing topping!
You can make this ahead of time and warm right before serving if needed.

Instructions
-
Cook the green beans in the steaming bag in the microwave according to package directions. Mine cooked for 2 1/2 minutes each.
