BBQ Chicken Thighs and Potatoes

Sometimes in my kitchen I bust out a little fancy schmancy-ness when I have some extra time, but this BBQ chicken thighs and potatoes recipe is certainly NOT one of these times.

Today friends I am bringing you what is quite possibly the easiest complete meal in the history of time.

OK OK that may be a little overdramatic… but I pinky promise you this meal is sure to become your new best friend.

With chicken and potatoes you’re almost guaranteed that everyone will be pleased at dinner.

It’s also made in one pan and takes just a few minutes to throw together before letting the oven do the remaining work.

Not to mention this meal is super budget friendly, the whole meal cost me less than $8!

How to make BBQ chicken thighs and potatoes

Ingredients for the chicken dish

First put four chicken thighs in a 9X13 baking dish.

Then cut a pound of red potatoes into one to two inch pieces.

I had petite red potatoes so most of them all I had to do was cut in half.

Arrange the potatoes around the chicken thighs and give a good drizzle of olive oil.

Then season with Worcestershire sauce, garlic paste, kosher salt, pepper, crushed red pepper flakes, and your favorite BBQ seasoning.

Give the chicken and potatoes a good toss and rub the seasoning into everything.

You could use tongs but what’s the fun in that… get in there with your hands and coat every bit of the chicken and potatoes.

Next add more BBQ seasoning, kosher salt, and pepper over top.

This dish will go into a 425 degree oven for 35 to 40 minutes.

We want to make sure that the potatoes are cooked and that the chicken is above 165 degrees before serving.

You could serve BBQ chicken thighs and potatoes with BBQ sauce for dipping if you’d like đŸ™‚

It is super flavorful on its own and the sauce is not needed… but it’s a nice option.

Ingredients

  • 4 chicken thighs
  • 1 pound red potatoes skin on, cut into 1 to 2 inch pieces
  • olive oil, kosher salt, pepper, crushed red pepper flakes
  • BBQ seasoning blend (homemade or store bought, I used Honey Hog)
  • 1 1/2 tablespoons garlic paste or minced garlic
  • 1 tablespoon Worcestershire sauce
  • Optional: BBQ sauce

Instructions

  1. Put the chicken thighs and cut potatoes in a 9 x 13 casserole dish.

  2. Drizzle olive oil over top and season with kosher salt, pepper, crushed red pepper flakes, BBQ seasoning, garlic, and Worcestershire sauce.

  3. Toss in the dish until everything is evenly coated and sprinkle a little more kosher salt, pepper, and BBQ seasoning over top. Bake in a 425 degree oven for 35 to 45 minutes. Make sure the internal temperature of the chicken is above 165 degrees.

  4. Serve with BBQ sauce for dipping if desired.
