Steak with Garlic Chive Cream Sauce

Steak with Garlic Chive Cream Sauce is quite an amazing and decadent dinner recipe.

The only thing better than a steak dinner is a steak dinner served with a rich and flavorful cream sauce, am I right?!

We served our steak over mashed potatoes, and the sauce was so yummy on the potatoes as well.

This meal is certainly fancy enough to serve at a dinner party or celebration, but easy enough to make as a weeknight meal.

You could even make the sauce ahead of time and store in the fridge until ready to serve.

How to Make Steak with Garlic Chive Cream Sauce

Cream sauces are not as difficult as you may think.

We are starting with some butter, heavy cream, beef or chicken broth, Dijon mustard, garlic, and fresh chives.

Put 4 tablespoons butter, 1 1/2 cups cream, 1/2 cup broth, a tablespoon of the mustard, lots of fresh minced garlic, and chives in a saucepan.

Season with kosher salt, pepper, and crushed red pepper flakes.

Bring this to a boil and reduce the heat to medium low, simmer 14 to 16 minutes.

Watch carefully when bringing to a boil, if it starts to bubble over remove from heat for a moment.

Let the sauce come to room temp while you grill the steaks, it will get thicker as it sits.

I have 4 New York strips, but any steak of choice will be just fine.

Rub both sides with olive oil, kosher salt, and pepper and head to the grill.

Preheat the grill to medium high and put the steaks on the grill grate.

Grill the steaks 3 to 5 minutes per side, depending on how you like them cooked and how thick they are.

I timed mine 3 minutes per side for a perfect medium rare.

Let the steaks rest for a few minutes before serving.

Serve Steak with Garlic Chive Cream Sauce over mashed potatoes and chives over top.

A perfect steak dinner that is truly restaurant worthy in my opinion!

Ingredients

  • 4 Tbsps butter

  • 2 to 3 Tbsps chopped chives (plus more to garnish over top)
  • 5 to 6 cloves garlic finely minced
  • 1 Tbsp Dijon mustard
  • kosher salt, pepper, crushed red pepper flakes
  • 4 steaks of choice (I used New York strips)
  • Optional: mashed potatoes

Instructions

  1. Set a saucepan over high heat and add the butter, broth, heavy cream, fresh chives, garlic, Dijon mustard, kosher salt, pepper, and crushed red pepper flakes.

  2. Bring this to a boil and reduce the heat to medium low, simmer 14 to 16 minutes. Let the sauce come to room temp while you grill the steaks, it will get thicker as it sits.

    Note: Watch carefully when bringing to a boil, if it starts to bubble over remove from heat for a moment.

  3. Coat the steaks with the olive oil and season both sides with kosher salt and pepper.

  4. Preheat the grill to medium high heat. Grill the steaks 3 to 5 minutes per side depending on thickness and how you prefer them cooked.

  5. Serve the steaks with the herb cream sauce and more chives sprinkled over top with mashed potatoes if desired (the cream sauce is so good on the potatoes).
