Slow Cooker Hoisin Peanut Noodles
Well this one was certainly a winner of a dinner recipe! Slow Cooker Hoisin Peanut Noodles were cooked to perfection in the slow cooker, Crock Pot, making it a super simple meal to prepare.
It was so unique and flavorful that we all had not only seconds, but thirds!
Slow cooker meals are kind of awesome!
Especially if you are at work all day or have a particularly busy day.
I like to prepare as much as I can the evening before, then finish in the morning before I leave for work.
How to make Slow Cooker Hoisin Peanut Noodles
So the evening before I mixed the suce together and put it in the fridge.
That way it was ready for me in the morning.
The sauce is a bottle of hoisin sauce, creamy peanut butter, soy sauce, ginger and garlic paste, and some fresh lime juice.
You could also add Sriracha for some spice.
Oh, and if you prefer you could always use fresh minced garlic and ginger instead of the paste.
In the morning all I had to do was place two pounds of pork (or chicken) in the slow cooker, and top with a diced onion and shredded carrots.
I used boneless pork chops and took some help from the store and bought pre-shredded carrots.
Pour the sauce over the meat and veggies and give it a little stir to make sure the sauce is evenly distributed.
Then turn the slow cooker to low.
After 6 to 8 hours of cooking away low and slow, shred the pork (or chicken) right in the slow cooker.
We will be adding some rice noodles to this, but first you need to cook them.
Cooking the noodles…
Usually it will give two ways to cook the noodles on the package…either boiling them or soaking them in hot water.
I soaked mine because I find they tend to get mushy when I boil them.
Once the noodles have soaked, drain the water and add the noodles to the slow cooker.
Stir them in and let it go for another 10 minutes or so on low.
Top Slow Cooker Hoisin Peanut Noodles with fresh cilantro and chopped peanuts 🙂

Slow Cooker Hoisin Peanut Noodles
Slow Cooker Hoisin Peanut Noodles can be made with either chicken or pork, it's a unique and flavorful meal cooked to perfection in the slow cooker!
Ingredients
- 1 15 oz bottle Hoisin sauce
- 1/2 cup peanut butter
- 1/2 cup soy sauce
- 1 Tbsp lime juice
- 1 Tbsp garlic paste or minced garlic
- 1 Tbsp ginger paste or minced ginger
- 1 to 2 Tbsps Sriracha (optional for spice)
- 2 pounds boneless chicken breasts or pork chops
- 1 onion diced
- 1 cup shredded carrots
- 1 8 oz package rice noodles
- chopped peanuts and cilantro for garnish
Instructions

In a bowl whisk together the Hoisin sauce, peanut butter, soy sauce, lime juice, garlic, ginger, and Sriracha.

Put the chicken or pork, diced onion, and shredded carrots in the slow cooker and pour the sauce over top, give it a stir until evenly mixed. Turn on low for 6 to 8 hours.

Shred the chicken or pork in the slow cooker with two forks. Prepare the rice noodles according to package directions (I soaked mine in hot water for 10 minutes and drained the water).

Add the cooked rice noodles to the slow cooker and stir until evenly mixed and cook 10 more minutes on low in the slow cooker. Top with cilantro and peanuts if desired.
