This Baked Taco Chicken took me only 5 minutes to throw together.
Then it bakes in the oven so I could be off doing other things.
My game plan for dinners this week was as quick as easy as possible.
LOTS going on, so I wanted to spend the least amount of time cooking in the kitchen.
How to make Baked Taco Chicken
I actually marinated this the night before in a gallon size plastic bag.
It’s simply olive oil, a packet of taco seasoning, garlic paste (or you could use minced garlic), kosher salt, and pepper.
Adding cayenne pepper would be a great addition if you wanted some spice.
Just massage the bag, which took about 2 minutes, and place in the fridge for several hours or overnight.
Then all that’s left to do is place in a 9×13 dish, add a bit more kosher salt and pepper, and pop it into a 400 degree oven.
The chicken bakes for 45 to 50 minutes, and no need to flip or mess with it at all.
Quite possibly the most difficult part was waiting for it to cool off enough to eat.
The kids, myself, and my husband were big fans of this super easy meal.
My husband even said ” hey, it really does have a taco flavor”…to which I replied ” yeah babe, that’s why I called it Baked Taco Chicken” 😉 Gotta love him!
Sides to go along with this dish are endless.

Baked Taco Chicken
A simple and easy dinner that the whole family will love
- 4-6 chicken legs (approx 2-3 pounds)
- 1 1/2 Tbsps olive oil
- 1 packet taco seasoning
- 1 Tbsps garlic paste or minced garlic
- kosher salt, pepper
- Optional: ground cayenne pepper to add some heat
Place the chicken legs into a gallon size ziploc bag. Add the olive oil, taco seasoning, garlic, kosher salt, and pepper and the cayenne pepper if using.
Massage the bag until evenly mixed, which does take a minute or two. Marinate in the fridge several hours or overnight.
Lay the chicken in a 9×13 casserole dish, sprinkle with more kosher salt and pepper. Bake in a 400 degree oven for 45-50 minutes.
