Moo Shu Pork Lettuce Wraps
Moo Shu Pork Lettuce Wraps were an amazing recipe.
Moo Shu Pork was one of my favorites when I was a kid to get if we ordered take out.
By definition, Moo Shu Pork means “a dish made with pork, vegetables, egg, and Hoisin sauce served in a crepe or mandarin pancake”.
Yes, ok…I totally looked up the definition…maybe it’s the weird teacher side of me 😉 .
There are SO many different recipes out there, so this is my version…
How to make Moo Shu Pork Lettuce Wraps
I started with a 1 1/2 pound piece of pork loin and thinly sliced it into 1 inch strips.
The marinade I used was Hoisin sauce, soy sauce, garlic paste, ginger paste, and Sriracha.
I don’t think the Sriracha is traditional, but it sure was yummy.
The pork marinated overnight.
Then in a large skillet over high heat add some sesame or vegetable oil and the pork, with the marinade.
This will cook for about 6 minutes, then remove from the skillet.
More sesame oil goes into the same skillet, but over medium heat, along with some gorgeous veggies!
I went with red cabbage, carrots, onion, and mushrooms.
This cooks for 5 more minutes.
Next up is green onions, Hoisin, soy sauce, garlic and ginger pastes, rice vinegar, and Sriracha.
This starts to smell pretty dang amazing at this point!
After a few more minutes you’ll make some space in the center of the pan.
Just move all the yummy veggies to the outer sides and pour 2 beaten eggs into the center.
Let the egg cook for a minute or two and then stir it.
After the egg is cooked through add the pork and you’re ready to serve!

Call me a rebel, but I broke the definition of Moo Shu Pork slightly by serving in lettuce wraps rather than the crepes.
It gives a nice crunch and freshness in my opinion.
Serve with more Hoisin sauce drizzled over top along with more green onions and sesame seeds if desired.

Moo Shu Pork Lettuce Wraps
A low carb way to enjoy this delicious homemade moo shu pork
Ingredients
Pork Marinade
- 1 1/2 pounds pork loin cut into thin slices, about 1 inch long
- 2 Tbsps Hoisin sauce
- 2 Tbsps soy sauce
- 1 Tbsp ginger paste
- 1 Tbsp garlic paste
- 1/2 Tbsp Sriracha (optional for spice)
Moo Shu Pork Lettuce Wraps
- 2 Tbsps sesame oil (or vegetable oil)
- 1 onion diced
- 2 cups shredded red cabbage
- 2 cups shredded carrots
- 8 oz sliced mushrooms
- 3 green onions sliced
- 1/2 cup Hoisin sauce
- 2 Tbsps soy sauce
- 1 Tbsp garlic paste
- 1 Tbsp ginger paste
- 1 Tbsp rice wine vinegar
- 1/2 Tbsp Sriracha (optional for spice)
- 2 eggs beaten
- 12 large lettuce leaves (Boston, Butter, or Bibb lettuce recommended)
- Optional: extra Hoisin sauce to drizzle over top, green onions, sesame seeds
Instructions
Pork Marinade

In a bowl or gallon size plastic bag add the thinly sliced pork, Hoisin sauce, soy sauce, ginger and garlic pastes, and Sriracha if using. Toss until evenly coated.

Marinate in the fridge at least one hour or overnight.
Moo Shu Pork Lettuce Wraps

In a large skillet over high heat add 1 Tbsp of the sesame or vegetable oil and the pork with the marinade.

Cook the pork 5-7 minutes until brown and cooked through, stirring occasionally. Remove the pork and set aside.

Turn the heat down to medium and add the remaining 1 Tbsp sesame or vegetable oil. Add the diced onion, shredded red cabbage, carrots, and mushrooms. Cook 4-6 minutes stirring occasionally.

Add the green onions, Hoisin sauce, soy sauce, garlic and ginger pastes, rice wine vinegar, and Sriracha if using. Cook 3 minutes, stirring occasionally.

Move all the ingredients to the outer edges of the skillet, creating a space in the center. Add the beaten eggs into that space and wait 1 minute, then stir and cook 3-4 more minutes until the egg is cooked through.

Add the cooked pork back into the skillet and stir until evenly mixed.

Serve in the lettuce wraps drizzled with more Hoisin sauce, green onions, and sesame seeds if desired.
