
Air Fryer Balsamic Veggies
This simple air fryer recipe could be a fabulous side dish, or serve it as a healthy, vegetarian dinner with some naan bread… either way Air Fryer Balsamic Veggies are pretty awesome!
You could even make a flat bread or use them to top a salad for even more Meatless Monday meal ideas 🙂
SOOO many options in addition to just serving them as a veggie side to complete any dinner.
All you need is shown below…

Whoops… forgot the balsamic vinegar in the first pic.
A pretty key ingredient especially when I am calling them “balsamic veggies” 😉

How to make Air Fryer Balsamic Veggies
First slice the mushrooms, red pepper, and half of a red onion.
Put them in a bowl along with two tablespoons each olive oil and balsamic vinegar.

Next add in a tablespoon of dried oregano, half a tablespoon garlic powder, kosher salt, and pepper.
Mix until evenly combined.

Then transfer them to the air fryer basket.
Set the air fryer to 390 degrees for 14 to 16 minutes, tossing them together halfway through.

Top your Air Fryer Balsamic Veggies with goat cheese (or feta) and basil if desired 🙂
Now that is one gorgeous sight right there, such pretty colors and you can almost taste how yummy they are.

Air Fryer Balsamic Veggies
Air Fryer Balsamic Veggies, an easy vegetarian recipe perfect for a side dish, top with goat cheese and basil, or serve with Naan for a meal!
Ingredients
- 1 red bell pepper sliced
- 1/2 red onion sliced
- 8 ounces sliced mushrooms
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1/2 tablespoon garlic powder
- kosher salt, pepper
- Optional: feta or goat cheese crumbles, fresh sliced basil, Naan bread
Instructions

Put the bell pepper slices, onions, and mushrooms in a bowl. Add the balsamic vinegar, olive oil, oregano, garlic powder, kosher salt, and pepper. Toss until combined.

Put the seasoned veggies in the air fryer basket. Set the air fryer to 390 degrees for 14 to 16 minutes, toss them together halfway through.

Serve topped with feta or goat cheese, fresh basil, and with Naan bread if desired. You could also use the veggies for a flatbread or salad topping.
