Air Fryer Balsamic Veggies, an easy vegetarian recipe perfect for a side dish, top with goat cheese and basil, or serve with Naan for a meal!

Ingredients
  • 1 red bell pepper sliced
  • 1/2 red onion sliced
  • 8 ounces sliced mushrooms
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1/2 tablespoon garlic powder
  • kosher salt, pepper
  • Optional: feta or goat cheese crumbles, fresh sliced basil, Naan bread
Instructions
  1. Put the bell pepper slices, onions, and mushrooms in a bowl. Add the balsamic vinegar, olive oil, oregano, garlic powder, kosher salt, and pepper. Toss until combined.

  2. Put the seasoned veggies in the air fryer basket. Set the air fryer to 390 degrees for 14 to 16 minutes, toss them together halfway through.

  3. Serve topped with feta or goat cheese, fresh basil, and with Naan bread if desired. You could also use the veggies for a flatbread or salad topping.
