Place flatbreads onto 2 lined baking sheets, 2 flatbreads per baking sheet. Spread the vodka sauce evenly on the flatbreads.
Note: For crispy flatbreads, bake lavash flatbreads in a 425-degree oven for 3 to 4 minutes before adding the toppings.
Sprinkle mozzarella over top, add pepper slices, shrimp, and goat cheese evenly over each. Season with kosher salt, pepper, and Italian seasoning.
Bake in a 425-degree oven for 12 to 14 minutes. Slice and serve.
