Ingredients
  • 3 pounds boneless, skinless chicken thighs (or breasts)
  • 1 tablespoon olive oil
  • 3 tablespoons BBQ seasoning
  • 4 tablespoons Sriracha
  • 1 1/2 cups BBQ sauce
  • 1/2 cup bourbon
  • kosher salt, pepper
Instructions
  1. Trim extra fat from the chicken thighs if desired and put them in a gallon size plastic bag.

  2. Add the olive oil, BBQ seasoning, and 1 tablespoon of the Sriracha to the bag. Massage the bag until evenly combined and marinate in the fridge a few hours or overnight.

  3. Add the BBQ sauce, bourbon, and remaining 3 tablespoons Sriracha to a small saucepan. Bring to a boil and reduce heat and simmer 3 minutes, stirring a few times.

  4. Set the grill or your Blackstone griddle to medium high. Put the chicken on the grill (add cooking oil of choice first if griddling), sprinkle with kosher salt and pepper, and cook 5 to 6 minutes per side, brush with the sauce a few times throughout.

  5. Serve the chicken with the remaining Sriracha Bourbon BBQ sauce.
