Ingredients
  • 1/2 cup quinoa
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 tablespoon Dijon mustard
  • 1/2 tablespoon honey
  • 2 teaspoons grated ginger (optional)
  • kosher salt, pepper
  • 4 cups fresh spinach
  • 1 avocado sliced
  • 1/2 cup walnuts
  • 1/2 cup feta or goat cheese
  • 1/2 cup dried cranberries (optional)
Instructions
  1. Cook the quinoa in a saucepan according to package directions and let it cool (this will make 1 1/2 cups total).

  2. While the quinoa is cooking and cooling make the dressing by whisking together the olive oil, lemon juice, Dijon, honey, ginger (if using), kosher salt, and pepper.

  3. Divide the spinach between two bowls. Top each with the cooled quinoa, sliced avocado, walnuts, feta or goat cheese, cranberries (if using), and the lemon dressing.
